  • 120 grams raw cashews, soaked for 6hrs & rinsed
  • 100 grams water
  • 100 grams banana
  • 30 grams Raw Honey
  • 1 heaped tablespoon cinnamon, ground
  • 1/4 heaped teaspoon nutmeg, ground
  • 1/2 heaped teaspoon Ginger, ground
  • 2 teaspoons vanilla extract + 2 vanilla beans, scraped
  • 1/4 heaped teaspoon Himalayan salt/Celtic Sea Salt
  • 50 grams chia seeds
  • 2 level tablespoons Shredded coconut

Recipe's preparation

    BANANA CHIA PUDDING
  1. Blend all ingredients (except chia seeds) for 15-20 sec on speed 7 until smooth.  Add chia seeds to TM bowl and stir 5-10 sec on Reverse on speed 4.  Pour into 4 x small bowls or 2  x large bowls.  Place in fridge, allow 30-60 min to set.  Garnish with shredded coconut, keep in fridge until ready to consume.

    Wow. This is so good. For my second batch I replaced the water with coconut water and used approx 250g coconut water which allowed the chia to absorb more liquid.

    It was all I could do to wait an hour for it to set. This pudding is to die for. I'm eating it now, still with a bit of chia crunch, but I couldn't wait any longer! tmrc_emoticons.D
