Raw Banana Split with strawberry choc sauce

Ingredients

Base

  • 250 grams almonds, activated and dehydrated if you have time!
  • 130 grams pitted dates
  • 1 teaspoon Vanilla Bean Paste

Banana Layer

  • 3 bananas, sliced

Vanilla Ice cream layer

  • 2 --- cups Raw cashews, soaked for 2-3 hours
  • 2 young Thai coconuts, flesh only (set water aside)
  • 220 grams coconut water or filtered water
  • 250 grams Pure Maple Syrup
  • 2 teaspoons Vanilla Bean Paste
  • pinch fine himalayan or fine sea salt
  • 60 grams coconut oil

Strawberry Choc Sauce

  • 180 grams Raw Honey
  • 90 grams coconut oil
  • 90 grams strawberries hulled
  • 35 grams Raw Cacao
  • 2 teaspoons Vanilla Bean Paste
  • 1 teaspoons Tuckeroo Strawberry Gum, optional (native spice)

Recipe's preparation

    Base
  1. Describe the preparation steps of your recipe

  2. Weigh in 250g almonds and blitz, 10 seconds speed 6 Add  dates and vanilla.   Pulverise 30 Seconds speed 9Repeat if necessary until it can be squeezed together in your fingers!Scrape out into a lined dish. (I use a lasagne dish)Use your MC to press down base very firmly until compacted together. 

  3. Banana Layer
  4. Cut Banana into slices and layer on top of your base

  5. Ice Cream
  6. Add all ingredients and process 1.5 mins Speed 9.  Check coocnut oil is melted fully, if not use temp 37 degrees and repeat  1.5 mins speed 4. Pour onto base and freeze overnightWash bowl 

  7. Raw Strawberry Choc Sauce
  8. Add all ingredients to bowl.4 mins 37 degrees speed 2 

    Add 1 tsp strawberry gum if using (Tuckeroo native spice)

    Whiz 5-10 seconds speed 7 to ensure strawberries are crushed.Cut icecream cake into segments and drizzle choc sauce on top of each one.
