Banoffee Cheesecake

Ingredients

Caramel

  • 70 grams raw sugar
  • 70 grams brown sugar
  • 70 grams golden syrup
  • 100 grams Butter
  • 150 grams double cream
  • 1 tablespoon vanilla extract

Cheesecake Base

  • 250 grams sweet biscuits
  • 125 grams Butter

Cheesecake Filling

  • 180 grams raw sugar
  • 500 grams Philladelphia Cream Cheese
  • 250 grams whipping cream
  • 1 1/2 tablespoons geletine, Disolved in 1/3 cup hot water
  • 2 tablespoons vanilla extract
  • 100 grams Cooled Caramel

Topping

  • 4 Lady Finger Bananas
  • 250 grams Caramel
  • 250 grams whipping cream

Recipe's preparation

  1. Caramel -

    Add sugar to bowl and mill on Speed 9 for 10 seconds

    Add remainder of ingredients and cook Varoma, Speed 3, for 12 minutes wirh MC off.

    Pour into a jar/bowl  & allow to cool

    Wash Bowl

     

  2. Cheesecake Base -

    Chop butter into cubes, add butter to bowl melt on temp 90, speed 4,  for 1 minute.

    Add biscuits & blitz on speed 9, for 10 seconds, scrape down sides & repeat.

    Press into 12 Individual Cheesecake bowls or 1, 22cm Springform tin.

    Place in fridge until needed

    Rince Bowl

     

  3. Cheesecake Filling -

    Add sugar to bowl and mill on Speed 9 for 10 seconds.

    Chop Philly into cubes & place in bowl, mix speed 5, 40 seconds

    Scrape down sides

    Add cream, geletine disolved in water, vanilla extract &cooled caramel to bowl, mix speed 6 for 30 seconds.

    Scrape down sides & mix for another 10 seconds, speed 6.

    Pour Filling onto base, smooth top

    Wash Bowl.

     

  4. Topping -

    Insert butterfly,

     Add cream & whip, 25 seconds, speed 4. (or until whipped)

    Chop Bananas & place on top of Cheesecake filling, Pour over desired amount of caramel

    ( I use approx 1 heaped tablespoon per individual cheesecake)

    Top with desired amount of whipped cream.

     

    any leftover caramel can be stored in an airtight jar or container in the fridge.
