Base

  • 250 g Packet Milk Arrowroot Biscuits
  • 125 g Butter, softened
  • 150 g Dark melting chocolate
  • 1 teaspoon vanilla
  • 2 tablespoon sugar
  • 1 egg
  • 65 g coconut, shredded

Filling

  • 20 g custard powder
  • 25 g Milk
  • 65 g Butter softened
  • 300 g icing sugar

Icing

  • 250 g Dark melting chocolate
  • 30 g Butter softened

  • 20 g custard powder
  • 25 g Milk

  • 300 g icing sugar

Recipe's preparation

    Base
  1. Place the arrowroot biscuits into the thermomix and mix at speed 9 for 3-4 seconds to create crumbs and set aside.

  2. Place butter and chocolate into bowl and melt at 50 degrees at speed 1 for 90 seconds checking sides as you go.

  3. Add vanilla, sugar and egg and mix at speed 3 for 5 seconds.

  4. Add coconut and biscuit crumbs and mix for 10 seconds at speed 3 until combined.

  5. Press into a square or rectangular pan and chill for 10-15 minutes.

  6. Put some water in the bowl and give it a quick clean on speed 9 for 10 seconds in between layers.

  7. Filling
  8. Mix all ingredients at speed 1 for 10 seconds then at speed 4 for 20 seconds till a soft spread forms.

  9. Spread over chilled base for 20-30 minutes.

  10. Put some water in the bowl and give it a quick clean on speed 9 for 10 seconds. Shake out the bowl and dab with a towel to remove the excess water before the next layer.

  11. Icing
  12. Place chocolate and butter in bowl and melt at 50 degrees, speed 2 for 2 minutes.

  13. Spread the chocolate over the chilled layers and chill till the chocolate top is beginning to harden (approx 10 min) then pre slice the chocolate top so it doesn't break when cut fully chilled.  Chill until firm (approx 1 hour) and cut into slices.

  14. Keep refridgerated.

Tip

This is a really sweet treat so don't make the slices too big unless you have a real sweet tooth!  If you have difficulty spreading a layer or slicing use a spoon or knife dipped in hot water.

    I used 140g icing sugar instead of 300g as suggested and I felt it’s sweet enough. Made it for my kids international day event representing Canada and this is a great recipe.

    Beautiful slice.  I used Malt biscuits as that was all i had in the cupboard - still nice.  Just a note for self next time I make it: add a little bit more custard powder?  thanks again
