Choc Berry Tarts (Gluten, Dairy and Refined Sugar Free)

Ingredients

10 portion(s)

Base

  • 140 g Nuts
  • 160 g dates
  • 1 tsp water
  • 40 g coconut oil
  • 10 g cacao powder
  • 10 g Shredded coconut
  • pinch Himalayan salt

Filling

  • 190 g Cashews, soaked for 30 minutes
  • 30 g Coconut Syrup
  • 80 g mixed berries
  • 15 g cacao powder
  • 100 g coconut cream

Recipe's preparation

    Base
  1. 1. Place nut in Thermomix bowl and mill for 10 - 15 seconds / speed 8. Set aside

    2. Place dates and water into Thermomix bowl and blend for 10 seconds / speed 7

    3. Add nut flour, coconut oil, cacao powder, shredded coconut and Himalayan salt and mix for 10 - 20 seconds / Counter-clockwise operation speed 3  

    4. Press filling into a silicone muffin tray or mini tart tray. Refrigerate for 1/2 an hour 

  2. Filling
  3. 1. Add cashews and blend for 30 seconds / speed 8.

    2. Add coconut syrup, mixed berries, cacao powder and coconut cream and blend for 2 minutes / speed 6, scraping down sides once or twice during this time.

    3. Fill the bases with the filling and allow to set in the fridge for 2-3 hours.

Tip

For the base, I used almonds and walnuts

  • Delish!!! Bases were a little

    Delish!!! Bases were a little bit soft so may leave in the fridge for longer next time but SO yummy!
