Choc Mint Ice-Cream

Ingredients

1 litre(s)

Ice Cream

  • 9 egg yolks
  • 130 g caster sugar
  • 330 g Milk
  • 450 g cream
  • 2 teaspoons vanilla essence, I Used Vanilla Paste
  • Green Food Colouring, Few drops, depending on how green you want it to be
  • 200 g Packet Choc Mint Slice Biscuits, Chopped

Recipe's preparation

  1. Place egg yolks and sugar in tmx bowl with butterfly in place and mix on speed 4 for 1 minute.

  2. Add Milk, cream and vanilla and cook for 10 minutes at 90 degrees speed 3.

  3. Place mixture in a jug and chill custard base overnight with plastic wrap placed directly on custard to prevent a skin forming.

  4. Tint custard with green food colouring and churn in an icecream maker until the consistency of soft serve ice cream.

  5. Place ice cream in a freezer proof container and mix through chopped biscuits.  Once frozen it will be ready to serve.
