Chocolate Baileys Mud Cake - ThermoFun

Ingredients

CAKE

  • 150g unsalted butter cubed
  • 200g milk or dark chocolate
  • 100g raw sugar
  • 100g brown sugar
  • 50g cocoa
  • 180g Baileys Irish Cream
  • 170g plain flour
  • 1.5 tsp baking powder
  • half tsp Bi Carb Soda
  • half tsp salt
  • 3 eggs, room temp.

GANACHE

  • 200g milk or dark chocolate
  • 100g cream
  • 100g Baileys Irish Cream
  • pinch salt
  • 15g unsalted butter, room temp

Recipe's preparation

    Chocolate Mud Cake
    1. Preheat oven to 160°C. Grease and line a cake tin.
    2. Place chocolate in TM bowl and grate 10 sec / speed 9.
    3. Add butter, raw sugar, brown sugar, cocoa and Baileys and mix 2 mins / 50°C / speed 5.
    4. Allow to cool for 15 mins and then add eggs and mix 5 sec / speed 5.
    5. Add flour, baking powder, bi carb soda and salt and mix 10 sec / speed 5. Scrape down and repeat until all combined.
    6. Pour mixture into cake tin and bake 40-45 mins or until a skewer comes out clean (ideally you want to see some moist crumbs stuck to it. This is one cake you don't want to over bake so better to be a little under than over). The top of the cake will be a little cracked but this is normal for a mud cake.
    7. Remove from oven and cool in tin 10 mins before removing and then allow cake to cool completely.
  1. Ganache
      1. Place chocolate in TM bowl and grate 10 sec / speed 9.
      2. Add cream, Baileys, salt and butter and mix 2 mins / 50°C / speed 5.
      3. Place TM bowl in fridge to cool down and thicken for at least one hour. Every 15 mins give the ganache a little stir to keep the temperature even and the ganache smooth.
      4. Once ganache is slightly thickened, turn cake over (so you are then pouring the ganache on to a flat top).
      5. If desired you can cut out a whole in the middle of the cake with a knife or round cookie cutter to make it a ring cake. This also makes a cake very easy to cut into pieces.
    To clean Thermomix bowl:
    1. Pour a glass of milk in TM bowl and mix 5 sec / speed 8.
    2. Heat milk 5 mins / 80°C / speed 4.
    3. Enjoy warm chocolate milk. No wasted chocolate!

Tip

In hindsight I think next time I would do the ganache first and while that is in the fridge then make the cake.   I was very impatient waiting for the ganache to thicken when my cake had already cooled enough to be able to spread the ganache on!  tmrc_emoticons.)

 

I used my home made Baileys in this recipe too - which makes it cheaper!

    Thank you for this recipe. I made this cake over the weekend for a friends 40th and it was amazing, so yummy! I used milk chocolate for the cake and dark chocolate for the ganache, worked perfectly.

    G'day thanks for the recipe - made your Irish Cream first then the mud cake and it turned out beautiful. Needed to bake for hour and half and i made it in a cake tin with a tube in it - looks great. The gnash is all glossy and looking forward to eating it with our grand children tomorrow.

    I just made this tonight and I have one word........ AMAZING!!! 

     

    As per your tip I made the ganache first, and cooked in a 24cm spring form tin, then cut the middle out with a cookie cutter and proceeded to slather that (still warm) piece with ganache as I just couldn't wait for it to cool. Best cake ever!

    i should have read the comments more carefully...( makes quite a large cake ).. i didn't  know what size of caketin to

    use...the mixture didn't look as that much, so i used a 20cm springform....obviously that was the wrong one, way too small..

    it didn't go over, all the way to the top, but was still very soft in the middle...i cut the middle part out with a cookiecutter, as mentioned in the recipe....tastes amazing....my question :

     

    what size springform did other members use ?? would a 24cm springform be correct ?? i would love to make this

    cake again for next weekend.....it really tastes amazing...

    I made this yesterday and don't think I have ever tasted anything so good! My dinner guests were most impressed and have placed orders for Chritmas!I used milk chocolate instead of dark chocolate and am glad, as it was really rich. It will be a feature on my fave list!
