chocolate beetroot mudcake

  • 310 gram beetroot fresh
  • 1/2 cup Oat Milk
  • 3 eggs
  • 280 gram Rice malt syrup
  • 2 tbsp Rapadura
  • 1/2 cup coconut oil
  • 1 tbsp Vanilla Bean Paste
  • 1.5 cups rolled oats
  • 3/4 cup almond meal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup Cacao
  • pinch pink salt
  • 2 tbsp dairy free chic chips, optional

Avocado frosting

  • 1 avocado
  • 1 tbsp Cacao
  • 1 tbsp coconut oil
  • 2 tbsp Raw Honey

Recipe's preparation

    chocolate beetroot mudcake
  1. **preheat oven to 180degrees and line cake tin**

     

    1. chop both ends of your beetroot and cut into quaters. Cook in a oven 180degrees for 45-60mins or until roasted. allow to cool slightly then peel of skin.

    2. place beets into TM chop sp5 10sec. Scrape. Chop sp5 10secs. Set aside.

    3. To TM add rolled oats. Mlll sp9 10secs. set aside

    4. Add to TM coconut oil melt 37 degrees 1.30min sp1.

    5. Add rice malt, rapadura, vanilla and reserved beetroots. blend sp6 10secs.

    6. Add oatmilk. Turn TM on to sp3, add eggs on a time through the top.

    7. Once added all eggs stop TM and add reserved oat flour, almond meal, cacao, baking soda, baaking powder and salt. Mix sp5 7secs.

    8. Pour into a greased spring load cake tin. Sprinkle over dairy free choc chips if using and using a butter knife slightly mix through. 

    9. Place into 180 degree oven for 60mins or until a scewer comes out clean.

    10. Allow to cool before icing.

  3. 1. add coconut oil to TM melt sp1 1min 37degrees

    2. add avocado skin removed to TM sp5 10secs

    3. add remaning ingredients mix sp5 10sec scrape sides.

    4. repeat step 3 unitl mixed well.

    5. gently spread over cooled cake.

    Can i make this cake with flour instead of almond meal? Was thinking of trying it for Indi's birthday but i dunno if all the babies are ok with nuts tmrc_emoticons.) x
