Raw Chocolate Protein Slice

Ingredients

Base

  • 80 grams raw almonds
  • 30 grams cacao powder
  • 60 grams Shredded coconut
  • 5 pitted dates
  • 4 tablespoons coconut oil
  • 1 tablespoon Raw Honey

Choc Topping

  • 80 grams cacao butter
  • 80 grams coconut oil
  • 80 grams Maple syrup
  • 40 grams cacao powder
  • 1 teaspoon vanilla extract or bean paste

Recipe's preparation

    Slice Base
  1. Place almonds, cacao powder, coconut and dates in Closed lid. Mill 9 seconds/speed 9.

  2. Add coconut oil and honey, blend 5 seconds/speed 5.

  3. Press into a square slice baking tray, ensure tin is lined with baking paper. Do not grease tray. Place in freezer whilst making the topping.

  4. Chocolate Topping
  5. Place cacao butter in Closed lid, mill 20 seconds/speed 8. Scrape butter down to base of bowl. Add coconut oil, melt 37°C 4 minutes/speed 2. Ensure cacao butter is completely melted before moving to next step.

  6. Add maple syrup, cacao powder and vanilla extract. Continue to melt 37°C 4 minutes/speed 1.

  7. Blend 10 seconds/speed 5.

  8. Remove slice from freezer and pour chocolate on top of slice. (Now... I only used half of the mixture and poured the rest evenly into chocolate moulds to have some cholocate handy for emotional emergencies (lol). See below for notes on this).

  9. Return slice to freezer for 30 minutes.

  10. Remove from freezer and cut into 12 portions, and try not to eat them all at once! Store in container in the fridge.

  11. The Chocolates....
  12. Regarding the chocolates, I half fill the moulds, sprinkle in some coconut or nuts (or both!), then top off the moulds with more chocolate. Put in freezer for 20 minutes to harden. If you don't have any moulds, place baking ppaper on a tray, sprinkle the coconut and nuts on the tray and cover with the chocolate. Then pour the cholocate over the top, and pop in freezer to chill. Once chilled, break into bite sized pieces.  Store chocolate in the fridge

    Just made this slice for the 4th time this year. I love it and I make a double batch or batch and a half. Chop it up smaller and it's such a satisfying little choccy treat. Have done a mostly hazelnut one, still delish but probably prefer almond. Thanks!
