Christmas Pudding with Brandy Caramel Sauce (Peel free)

Christmas Pudding

  • 380 g cranberries, dried
  • 110 g brandy
  • 120 g water
  • 200 g Butter, softened
  • 165 g brown sugar
  • 2 eggs
  • 70 g Breadcrumbs (or stale bread)
  • 250 g Turkish Apricots, in pieces or chop in TM before starting recipe
  • 110 g plain flour
  • 1/2 teaspoon bicarb soda
  • 1 tablespoon mixed spice
  • 2 teaspoons ground nutmeg

Brandy Caramel Sauce

  • 100 g Butter
  • 300 g cream
  • 220 g brown sugar
  • 60 g brandy

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Christmas Pudding
  1. Grease a 1.75Litre pudding steamer; line base with a round of baking paper. Place a small wire rack or inverted saucer into the base of a large saucepan - make sure the pan is big enough that the lid can fit on with the pudding steamer inside. Half fill the pan with water, cover, bring to the boil.
  2. If using stale bread, add 70g bread to the bowl and pulverise on Speed 7 for 10-15seconds or until desired consistency is achieved. Set Aside.

    Add Flour, BiCarb, Mixed Spice & Nutmeg to the bowl and mix on Speed 5 for 20-30 seconds. Set Aside.


    Add Cranberries, Brandy & Water to the bowl and cook for 6-7 minutes at 100deg, Reverse Speed 1 or until all the liquid is absorbed. Set Aside. Wash bowl.



    Add Butter to the bowl and chop for 5seconds on Speed 8. Insert butterfly and add sugar, whip for 2minutes on speed 3-4.


    Add eggs to the mixture 1 at a time on Speed 4 (approximately 5 seconds per egg). Remove butterfly.


    Add Breadcrumbs, Apricots, Dry Ingredients and cooled Cranberry mixture back into the bowl. Use the Knead function until just combined - 1minute 30 seconds.


    Spoon the mixture into the prepared steamer and secure the lid. Place steamer into the saucepan with enough boiling water to come halfway up the side of the steamer. Put the lid on the saucepan and steam for 3-4 hours (longer cooking time will give a darker pudding). Replenish with boiling water as needed to maintain boil and water level during cooking. Stand pudding for 10 minutes before turning out.

    Varoma Method:
    Fill Thermomix bowl with 2 litres of boiling water and cook for 90 minutes/Varoma/Spd1. Check that water level is at 2 litre mark then cook another 90 minutes/Varoma/Spd 1. Check water level again and cook a further 60 minutes/Varoma/Spd 1.

  4. Add all ingredients into the bowl and cook for 8 minutes at 90 degrees on Speed 3.

    Mwallace: I tend to make it about now and just keep it in the fridge but you could freeze if you wanted and take out a couple of days before you need it. I also just reheat in the microwave but you could steam it in the varoma.

    DiMac:My original comments on this pudding (July 2014) still stand! I am about to make it for the 5th year in a row - Christmas in July each year, but have been doing it each Christmas as well. It is the "always requested" family pudding now. So easy to make, and so yummy to eat!

    This was a huge hit on Xmas day. Everyone loved it and it was so easy. I have made the traditional family recipe for years which has been a big hit too but this recipe was eaten by 2-4yr olds as well.  Suits those who aren't keen plum pudding fans as well as those that like the traditional one. The sauce is to die for too - I put the pudding in a low wide dish and poured the sauce over it so people could scoop more sauce over their portions. It will definitely be on the menu again.

    I made this a few weeks ago for an early Christmas luncH. It was the easiest pudding I have ever made.  I made it the day before steamed for four hours then on the day just heated it up by steaming again for 10 minutes.  It was delicious and enjoyed by all, some saying it was the best pudding they had ever eaten.  I am making it again tomorrow for Christmas day. thanks for the recipe.

    And the caramel brandy sauce, should that be poured over the cake when its still warm?

    I made this for our early xmas - took less than 30 minutes from start to finish and then put it on to steam for 4 hours and then straight to the table - it was the most delicious and moist pudding.  I thoroughly recommend this, everyone commented on how delicious it was.
