Base

  • 250 g packet, Buternut Snap Biscuits
  • 125 g Butter, Softened
  • 2 tsp vanilla
  • 100g 70% Chocolate
  • 80g Shredded coconut

Filling

  • 30 g custard powder
  • 70 g Milk
  • 50 g coconut oil
  • 300 g icing sugar

Topping

  • 155 g coconut oil
  • 20 g raw cacao powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. 1. place the biscuits into the TM bowl and mix speed 9 for 10 sec to make crumbs and set aside

    2. place the butter and chocolate into TM bowl and melt 50 degrees,  speed 1 for 3 min.

    3. Add vanilla and coconut and biscuit crumbs to TM Bowl. Mix 10 seconds, speed 3 until combined.

    4. Line a slice pan with baking paper. Press Base mixture into pan and chill.

     

  2. Filling
  3. 5. In a clean TM bowl add all ingredients for filling and mix speed 1 for 10 seconds then speed 4 for 30 seconds until well combined.

    6. Spread over base and chill for 10 min.

  4. Topping
  5. 7. Place all the topping ingredients into a clean TM bowl and mix 5 minutes, 37 degrees at speed 3.

    8. Pour the chocolate topping over the chilled layers and chill about 15 minutes then remove from fridge and score the topping into desired portion sizes to prevent cracking.

    9. Chill for an hour or more then cut into slices. Keep refrigerated.
