Easy Caramel Fudge

Ingredients

Caramel Fudge

  • 170 grams white chocolate
  • 1 can sweetened condensed milk, (not skim)
  • 160 grams brown sugar
  • 120 grams Butter
  • 75 grams golden syrup
  • 50 grams glucose syrup

Recipe's preparation

    Easy Caramel Fudge
  1. Place broken up chocolate into TM Closed lid for 5 seconds, Speed 9. Set aside.

    2. Add condensed milk, chopped butter, brown sugar, golden syrup and glucose syrup to TMClosed lid , cook for 8mins at 100C on speed 3. With the MC removed.

    3. Scape the sides and bottom of bowl with spatula.

    4. Cook for a further 20 mins at Varoma Temp on Speed 3, (Again remove MC to ensure the condensation does not drip back onto the fudge)

    5. Add Chopped chocolate into TMClosed lid, 10 secs on Speed 3-4, ensure choc has melted. Repeat if necessary.

    6. Pour into lined square 20 x 20cm tin or slice tin, refrigerate until set. Then slice into very small squares.

    Note:Can be frozen, wrap in baking paper and then plastic wrap and keep up to 4 weeks.

    I've made this fudge several time, follow the recipe exactly and it never fails 😍
    Adding salty pretzels on top once it's poured into the tray makes it even better as the pretzels cut through the extra sweet taste. Always a big hit with family and friends.

    Finally, I've found the best recipe ! And I've tried a few. Thank you Caroline. I made it this morning, and a few hours later it's set and cut up already. Texture is perfect, firm yet gooey, tastes amazing. I only had nestle choc melts, but it worked out well. This will be my new go to, all ready for Father's Day.

    Have made this many times. This time I decided to make Fructose Friendly by switching brown sugar to coconut sugar. It was even better! Gorgeous, rich colour and even more caramel flavour! I recommend trying it!

    Everyone loved it even though I forgot to add golden syrupPuzzled I didn't have brown sugar only dark brown sugar so I guess these molasses content made up for the lack of golden syrup. I also added some roasted macadamias. Will be a regular at bake sales. Thanks for the recipeSmile

    madtah:Hi, The original recipe cooked for the 2nd part as Varoma temperature Speed 3 for 20 mins. It has since been altered, increasing to 22 mins at a lower speed. Thermomix does not approved of Varoma temperature used on speeds greater then 2.

    Jen_Cousens: Thermomix removed the recipe from the recipe community because it was cooked on Varoma Speed 3 for 20 mins for the last cooking. Thermomix does not allow Varoma cooking over speed 2. I hope this helps?
