Frozen Mango Bars...

Ingredients

24 slice(s)

  • 220 grms water
  • 200 grms sugar
  • 3 x 425 gcans sliced mangoes, drained or equivalent to fresh/frozen mango flesh
  • 20 grms lemon juice (use spatula end to squeeze juice out)
  • 300 grms thickened cream
  • 6

Recipe's preparation

  1. Boil sugar and water in TM bowl for 5 mins on 100c, speed 2 until syrup thickened..set aside to cool.

    Blend mangoes, syrup and juice on speed 8 for 30 secs until smooth. Pour into a bowl. Measure 1 cup of mango mixture back into TM bowl, adding cream and blend on speed 3 for 5 - 10 seconds. Pour this mixture into  a 20cm x 30cm laminton pan lined with foil, and freeze until firm. Pour remaining mango mixture over frozen mango cream in pan. Freeze for several hours, or until firm. Cut into bars when frozen and store in freezer until ready to serve..

Tip

When cutting into bars...if you tip the tray upside down, peel the aluminum off first and then turn it back to the other side...so that the cream is on the bottom. Use a sharp knife to cut the bar slices so you get a nice clean cut..unlike the photo..where I cut it from the bottom...and it did not cut so well.I also used all coconut cream and it turned out quite icy..where cream will set perfectly.

    Absolutely delicious!
    Had never tasted canned mango before so bought 3 tins, opened and drained them, and luckily thought to taste them. Absolutely revolting and sickly and didn't even taste like mango. Luckily I had 2 x 500g bags of frozen mango in the freezer so substituted those.
    Would definitely recommend fresh or frozen mango for this recipe. Canned tasted very artificial and yukky.
    Great recipe otherwise though thanks!

    I used leftover fresh mango and it was deliciously sweet and the cream layer was wonderful. My almost 3 y/o absolutely demolished it and kept asking for more.

    Thank you for sharing and for others leaving comments. I reduced fresh mango to 900gm but then blended up extra fresh mango as i needed to bulk up mango mix as i made ice blocks first then put remainder in a tray.

    This was so delicious I used fresh mangoes and cooked the syrup a bit longer. A tip I used was using the Kmart silicone loaf pan for each bar

    Just did this recipe. Instead of using tinned mangos I used tinned fruit salad. Came out delicious! Definitely will be doing this again maybe adding a little passion fruit next time.

    any ideas
    i ended up reblending and popping back in freezer, fingers crossed. So i dont have layers but hopefully edible

    Delicious! I used fresh mango - 7 small to medium sized kensington pride, which ended up with approx. 1000g of fruit. When I poured the cream part into the tray it didn't look like it was going to be a very thick layer, so I made a second lot of the cream section. There was plenty of mango so the two layers ended up being about the same size. Cut it into 16 good sized bars. Definitely will make again when I have lots of mangoes.

    These are beautiful!!! I used fresh mango and you definately don't need 1200g - prob about 900g is fine. I cut down the sugar as I think fresh mangoes are alot sweeter. Also, the syrup doesn't go thick straight away, so just stick to the time mentioned and it will turn out fine. So lovely!!! Thanks!

    And the cost - next to nothing !
    I made a double - making double sugar syrup, then making two separate batches from that. One with mango, and the other with banana/mango, both yummy 😊

    These are amazing! Better than Weiss bars, and so easy to make. I used 750g of fresh mango, and it made 16 bars. I will try yoghurt or coconut milk next time, also looking forward to trying other fruits. I love Weiss bars but they are so expensive, so I’m delighted with this recipe. Thank you!

    I made these for Aussie Day celebrations, just delicious!  I used fresh mango that I had frozen when they were plentiful.  I too wasn't sure what a drained can weighed, so I used probably too much mango, note to self for next time!  Still worked out just fine, but would be better if they weren't so thick. Such an easy recipe and I will make them again tmrc_emoticons.)
