Fructose-Free Sweet Potato Pikelets

Ingredients

10 piece(s)

Sweet Potato Pikelets

  • 75 g Plain self-raising flour
  • 75 g wholemeal self-raising flour
  • 270 ml can coconut milk, shaken up before opening
  • 2 eggs
  • 1/3 cup sweet potato puree (see tip)
  • 1/2 tsp Vanilla powder
  • Pinch salt
  • Coconut oil, for frying

Recipe's preparation

  1. 1. Place the butterfly in the TM bowl.

    2. Add the flours to the TM bowl, and top with the coconut milk, sweet potato, 1 of the eggs, vanilla powder and salt. Process for 15 seconds on speed 2. Scrape down the sides of the bowl.

    3. Add the remaining egg, and process for 15 seconds on speed 2.

    4. Heat a non-stick frying pan over medium heat, and melt a little coconut oil. Place spoonfuls of the batter into the pan, and carefully flip over once the edges start to set and bubbles appear on the surface.

Tip

This makes about 10 pikelets. The sweet potato adds a richness (and some sneaky nutrition!) to the pancakes.

I have served these with natural peanut butter, cinnamon cream cheese, and pecans toasted with a little rice malt syrup (fructose-free).

I keep batches of sweet potato puree (and also pumpkin puree) in the freezer - great for including in recipes like these, and as side dishes to main meals!
