Healthy Chocolate Rice Bubble Bars

Chocolate Rice Bubble Bars

  • 4 cups rice bubbles/puffed rice
  • 1/2 Cup desiccated coconut, if desired
  • 5 medjool dates (or dried), approx 60g
  • 130 g coconut oil
  • 100-120 g honey, depending on taste
  • 2 heaped tablespoons cacao powder

Recipe's preparation

    Healthy Chocolate Rice Bubble Bars
  1. Line baking dish or tray with greaseproof paper.

    Measure 4 cups of rice bubbles/puffed rice and 1/2 cup of dessicated coconut into a mixing bowl.

    Place dates in TM and chop on speed 6 for 5 seconds. Add coconut oil, honey and cacao powder and cook for 5 mins, 100 degrees, speed 2.

    Once finished cooking the mixture should be at a thick pouring consistency. Pour the mixture into the rice bubble/puffed rice mix and mix together until all the rice bubbles are well coated.

    Place the mixture into the baking dish/tray and press down until mixture is even and compact. Refridgerate for at least half an hour until set then cut into slices. I get about 30+ slices each time. 

    The bars must be refridgerated at all times or it will start to melt and come apart.

    I too had the same problem with coconut oil mixture seperating, despite following the instructions. Should the coconut oil be in liquid form or solidified? Does it matter? A reply would really be appreciated please since a few have had the same problem. Thank you.

    I've tried making these twice now and both times the coconut oil has seperated from the mixture. I followed the instructions so I'm not sure why it isn't working out tmrc_emoticons.(

    Mine did exactly the same!! Coconut oil just floated above everything else.. Would not mix! Seems like an awful lot of coconut oil to me

    Keeps separating.

    1st attempt with dried dates - worked well but need to blitz dates longer. 2nd attempt with dried figs, coconut oil & cacao mix separated. 3rd attempt with fresh dates, again coconut oil & cacao mix separated.

    Annoying as its a decent amount of my c.oil that I'm dipping into each time. What am I doing wrong?

    Wow! These are really delicious.  I made some for a treat for my daughter to take to the movies but I can't stop eating them. I did use the full amount of honey and big medjool dates and while they are certainly sweet I like them that way. I do have a huge sweet tooth though. They have really turned out great. Thanks for the recipe.

    These are great kids loved them!  I used dried pitted dates, I did find I had to blitz them for about twice as long as the recipe says. I also used cocoa powder as I didnt have cacao, not as healthy but still a lot healthier option than the versions at the shops! Thanks for the recipe!
