Jelly Slice

Ingredients

Base

  • 250 g Digestive biscuits, (or shredded wheat biscuits)
  • 400 g pitted dates
  • 5 tbsp Boiling water

Middle Layer

  • 500 g light Philadelphia Cream Cheese
  • 1 can skim condensed milk
  • 2 tsp vanilla extract
  • 2 tbsp powdered gelatine, (dissolved in 1 cup of boiling water)

Top Layer

  • 1 bottle V8 Smoothie, (750ml Bottle) - I used Strawberry Rasberry and Banana Flavour
  • 2 tbsp powdered gelatine, (dissolved in 1 cup of boiling water)

Recipe's preparation

    Base
  1. 1) Line the base of a 28 x 20cm slice tray (or small baking dish) with baking paper ensuring the ends over hang to make it easy for removing the slice.
    Spray the sides of the tray not covered with paper, with oil spray.

  2. 2) Crush biscuits - Closed lid Speed 9, 10 seconds
    Empty into a separate bowl

  3. 3) Chop dates - Closed lid Speed 8, 10 seconds
    4) Add boiling water
    Mix - Speed 5, 5-10 seconds

  4. 5) Add crushed biscuits to the bowl
    Mix Counter-clockwise operation  - Speed 2, 20-30 seconds, until dough like

  5. 6) Press crumb mixture into the tray, cover with a sheet of baking paper and roll a glass over to press mixture to an even firm layer.

    7) Chill whilst preparing the other layers.

  6. Middle Layer
  7. 8 ) Combine Gelatine & boiling water (did this separately, but I could have done this step in the TM)

  8. 9) Add the Cream Cheese, Condensed Milk, Vanilla, and Gelatine to the bowl. Closed lid
    Mix - Speed 5, 20-30 seconds

  9. 10) Pour gently over the base layer, and refrigerate for 2-3 hours

  10. Top Layer
  11. 11) Combine Gelatine & boiling water. 

    12) Add Smoothie Juice to the Gelatine, and combine.
    (this can be done in the TM or in a separate bowl)
    13) Set aside for approximately 1 hour, or until jelly begins to thicken

    14) Pour over the set cheese layer and return to the fridge to set for another 2 hours

  12. Cut into 4cm squares to serve.

Tip

* I find this quite sweet with the dates in the base, so I often cut the slices in half again (2 x 4cm).

 

* You can use any flavour for the top layer.

* This recipe was adapted from Weigh It Up - //www.weighitup.com.au/recipe/264/jelly-slice  which is a healthy makeover of the classic Country Women's Association recipe.

Butter and high-fat, sugar-processed biscuits in the base have been replaced with high-fibre biscuits and dates. Full fat cream and cream cheese have been replaced with low fat versions and a healthy layer of real fruit (and would you believe vegetables!) for the traditional sugar-y jelly. So not only are you indulging in a sweet treat, you are also benefiting your body with all the vitamins, minerals, fibre, antioxidants and probiotics in these healthy ingredients.

You need to make this well ahead of time due to the resting times needed for the layers to set.

    My 8yr old son made this yesterday and it's delicious!! I found the quantities a little out though. The base is the perfect amount but the middle and too layers made way more than you need. I had to put heaps into a separate container to the layers were equal for this slice. I'd almost halve them next time and it would be perfect I think. The flavours of the lays are wonderful!!
