Ingredients

Sauce:

  • 100 grams dark chocolate
  • 100 Ml cream
  • Dash Brandy (optional)

Puddings:

  • 100 grams dark chocolate
  • 60 grams raw sugar
  • 130 Ml cream
  • 2 eggs
  • 170 grams SR flour
  • 180 ml milk
  • 1 tablespoon cocoa
  • 80 grams Dried Cherries, (Option: soaked in brandy for a few hours)

Recipe's preparation

    TO START:
  1.  

    ·         Place raw sugar in TM bowl and mill for 10 seconds on speed 10. Remove and set aside.

     

    ·         Place dark chocolate for pudding and sauce (200g) into TM bowl  and mill for

     

    10 seconds on speed 10.

    Set aside half the milled chocolate

  2. SAUCE:

    To the remaining chocolate, add 100ml cream, and heat for 2 minutes at 50° on speed 2. Set aside to pour over cooked puddings.

     

  4. PUDDINGS:
  5.  

    Add milled sugar to bowl (no need to clean the remaining sauce residue), with the butter and mix for 8 seconds on speed 7.

     

    Add eggs, flour, cocoa, milled chocolate, and milk and mix for 8 seconds on speed 5.

     

    Add Choc bits and drained cherries and mix on reverse, for 5 seconds on speed 5.

     

    Divide batter between 12-14 small silicone moulds and place into Varoma dish and tray. (Don’t overfill moulds as the batter will rise).

     

    Rinse TM bowl and add 1 litre water.

     

    Set Varoma into position & steam for 20 -25minutes at Varoma temperature on Speed 2.

     

    Place chocolate sauce on top of Varoma, in heatproof dish, while cooking puddings, to keep slightly warm.

     

    Unmould puddings onto serving plate and pour hot sauce over. Serve with cream or ice-cream.

    In the method the recipe says to add  sugar and butter together but no butter is mentioned in the ingredients. OK presume the  130 g of cream should be butter?
