Layered Fruity Dream Ice cream Cake - ThermoFun

Ingredients

12 slice(s)

Layered Fruity Dream Icecream Cake

  • 180g raw sugar
  • 350g Frozen Strawberries
  • 350g Frozen Oranges
  • 350g Frozen Mixed Berries
  • 3 egg whites

Recipe's preparation

    1. Place sugar in TM bowl and mill 20 sec / speed 9. Set aside. NB: You need 60g per layer (or less if you wish) - but it is easier to mill it all in one hit while you have a clean dry bowl.
    2. Place 60g of the sugar that you have just set aside in TM bowl.
    1. Add frozen strawberries (or fruit of your choice) and chop 10 sec / speed 8. Scrape down.
    2. Insert Butterfly. Add 1 egg white and mix 45 secs / speed 4 or until you have a soft consistency.
    1. Pour first layer into a cheesecake spring form tin.
    2. Flaten the mixture with the spatula.
    3. Place tin into freezer for half an hour.
    4. Repeat the same for the next two layers. (remember to place in freezer each time for approximately 30 minutes). This will just make it easier to pour the next layer on.
  1. Freeze for a few hours before required. 

    TIP:  Before you unclip the springform tin to open it - go around the edge of the tin with a knife to loosen away from the tin.

Tip

ANY frozen fruit can be used for this - you are only limited by your imagination!

I do know of someone who has done it in a tin lined with Glad Wrap if you don't have a spring form tin.

    This turned out so well, thank you Leonie! I used half the sugar (30gm) for the fruit layers and cheated a bit using a Sara Lee Salted caramel ice cream for the middle layer and actually that was perfect. Everyone loved it. And the whole thing was delicious again the next day. Your instructions are great and I will definitely make again. Yum!

    I made this for Mother's Day yesterday and it was a big hit. for the bottom layer I used the raw chocolate icecream recipe and just made that later thin and it gave it a bit of a kick, acted sort of like a base of a cheesecake. Then I made a mixed berry layet and strawberry layer. Halved the sugar each time and it was soooo good! Ill be making it again!!

    I have a Christmas cake recipe which rises too high for my tin so I make the sides taller with a 'hat' of baking paper, works a treat! Might be worth a shot for a mega multi layered dessert? I'm thinking rainbows!

    Hi Kat, Yes I do break the orange into segments before I freeze them.  I personally don't worry about moving the pith too much - it'll just get blitzed up andyou wont even see it!  tmrc_emoticons.)

    I line the containers  with Gladwrap and bring it over the top so all the fruity dream, sorbet eat is covered. They last in the freezer for days. I live on my own so one quantity does me quite a while to get through. Have never has a problem with them icing up. Hope this helps.

    This looks wonderful but how well does the leftover cake freeze? I find that sorbets, fruity dreams ice up too much if left in the freezer for a day or more. I usually have to re do  them in the thermo. Having to chop this up and redo would be a shame tmrc_emoticons.)
