LCHF CHOCOLATE WALNUT KETO FUDGE

  • 120g Butter, cubed
  • 120g Cream Cheese, Cubed
  • 40g cacao powder
  • 40g xylitol or sweetener of choice, to taste
  • 1 tsp vanilla extract
  • 40g walnut pieces

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add cream cheese and butter to TM bowl and mix for 2.5 minutes, 40 degrees on speed 2 until soft and there are no lumps.

     

    Add cacao, xylitol and vanilla extract and mix 5 seconds on speed 6.  Scrape down sides of bowl.

     

    Add walnuts and mix for 3 seconds on speed 4.

     

    Remove from TM bowl and pour into a container lined with baking paper. 

     

    Refrigerate overnight or until set.

     

    Slice and serve.

The original recipe for this keto fudge is from Ditch The Carbs - I have converted it to be made in the Thermomix.

Perfect for anyone doing LCHF (low carb healthy fat) lifestyle.

Walnuts can be replaced with pecans or almonds if preferred.

    Not normally a fan of fudge but these are delicious and so easy to make. Just made my second batch adding slivered almonds and a little almond essence. After setting/slicing I keep in freezer so they are handy for when I need a ‘fat-bomb’ (the real reason is if I kept in fridge I’d eat them all in one day). Easy to adapt recipe for different flavours/variations.

    just finished making this in fridge setting as I type few changes I used cocoa powder 35gms as this is all I had hazelnut extract instead of vanilla and pecans instead of walnuts was a little heavy handed with these about 80gms cant wait to have a piece

    Tried this last night and what can I say so bloody nice even took some to work to share and got so many compliments so will now use this as a base for other choc fudges tmrc_emoticons.)

    I made this last night ... It was so quick and easy ... And damn delicious ... Licking the bowl was heaven and this morning after it being in the fridge overnight  I cut it into little squares ... 3 of which fell in my mouth ... Unbelievable so good !!! Not sickly at all ... The cream cheese adds a Devine flavour ... Well done and thanks for shareing ... tmrc_emoticons.)

    Mmm this is so yummy and so easy to make!!! I used pecans instead of walnuts and it's delicious! Next time I'm going to leave the nuts out and add a drop of orange essential oil!
