- 300 grams thickened cream

Recipe's preparation
Melt butter for 2 1/2 minutes/90deg/speed 2
Add biscuits and crush 5 secs/speed 9
Press biscuit mixture into 8inch/20cm spingform tin, and place in fridge to set
Place condensed milk, cream cheese and thickened cream in clean TM bowl. Mix for 30secs/speed 6, adding lemon juice in a steady stream for the last 15 seconds
Pour mixture over prepared biscuit base and refridgerate minimum 6 hours, preferably overnight, until set. Decorate with cream and fruit of choice (eg strawberries) before serving.

This time-out I put in 6 myer lemons which equalled to 545g of juice. The cheesecake didn't set. Whilst it was still yummy it wasn't suitable fir a party.

Biscuit base I done 150gm butter and the lemons I did 4 which equalled to 300g of juice. I have a Myer Lemon tree that produces very large juicy lemons.
I used the largest spring form pan I have which is around 35cm diameter. I put the crumb along the bottom and sides of the cake, the filling I thought might be to much but it wasn't. It was perfect!
A definite keeper for future gatherings when my tree is blooming with lemons like it is today.

My cheese cake is currently setting in the fridge. I used 200g of lemon which was about 5 lemons and that was the perfect amount for us.
When I put the base mixture into my 20cm round cake tin it took up half the tin. So I spread it all the way up the sides. The cheesecake mixture didn't quite all fit in our tin but the family was happy to finish the bowl of left overs! 😂

This is so yummy, it's now my families favourite dessert. I halve the base recipe as I find it too thick & goes very hard. Halving the recipe is the perfect base for us. I decorate with a few strawberries.

I made this while on holidays today, very easy, convenient with only a few ingredients needed and got great reviews from my friends! I used one packet of Marie biscuits with about 150g butter. Then halved all other ingredients. Made it a big rectangle casserole dish. Easily served 10 people. ate it 5 hours after I made and was set perfectly.

Flavours were great but even though I followed recipe, didn't set properly, even after leaving overnight. Going to make it again though and perhaps try halving to see if that helps.

I put about 250 lemon juice - i used 6 big lemons from our tree. This recipe makes A LOT.. Made a cheesecake tin plus 16 cupcake/muffin tin ones too! isnt set yet but the mixture tastes yummy

Yummy!!! comments from family include, yummy, fantastic and Best ever. i think the biscuits need to be cut first then add melted butter and recipe could be halved unless you plan to make one giant cake. I had a 20cm pan and also made a few other mini cheesecakes. Lovely to make and easy to eat!
