Mango Cheesecake

Ingredients

12 slice(s)

Cheesecake

  • 240g digestive biscuits (or plain biscuits)
  • 120g Butter
  • 120g raw sugar
  • 500g cream cheese
  • 1 mango, ripe
  • 1 tablespoon gelatine (or agar agar)
  • 2 tablespoons Boiling water
  • 300g cream

Mango Coulis

  • 1 mango, ripe
  • 20g raw sugar
  • 1 tablespoon lemon juice

Recipe's preparation

    Cheesecake
  1. Put the butter into the TM bowl and melt for 2 mins at 60 degrees on speed 2.

    Weigh in the biscuits and blitz into the melted butter on speed 6 for 5 secs.

    Spread into the tin.

  2. Weigh in the sugar and mill on speed 10 for 10 secs.

    Add the flesh of 1 mango and the cream cheese and mix on speed 5 for 20 secs until smooth.

  3. Mix the gelatine with the water and allow to cool.

    Weigh the cream into the TM bowl and pour in the gelatine mix.

    Mix on speed 5 for 20 secs until smooth and pour onto the biscuit base.

  4. Mango Coulis
  5. Weigh in the sugar and mill on speed 10 for 10 secs.  Add the flesh from the mango and the lemon juice and blend on speed 7 for 15 secs.  Spread over the cheesecake !!!

    Keep in the fridge until time to serve.

    Made this yesterday for our family Christmas. Doubled the Coulis as others suggested but it didn't set. Tasted yummy but ran off the top when I took it out of the tin. The cheesecake was delicious. As others have said you need to read through the recipe and make the gelatine mixture first. Sprinkle into cold water and mix thoroughly and then warm gently in the microwave and let cool. I used caster sugar instead of raw sugar so mixed all together without milling it first. Will definitely be making again.

    I just used the coulis in this recipe - I doubled the recipe and was very nice. I used caster sugar instead of raw. otherwise coulis recipe followed to a tee.

    I can not comment on the cheesecake as I have not made this one yet, but will next time.

    I’ve decided that gelatine & I don’t get along! I changed the recipe slightly as mangos are not in season, so I strained crushed pineapple into the mix & didnt make the topping. Would have been awesome except for the little lumps of gelatine I always seem to create. (at least I’m consistent !!) 😂

    Was fairly straight forward to make although the instructions do not flow very easily. I read the other comments and so doubled the coulis (made the perfect amount) and followed the gelatine instructions on the packet. It tasted amazing and was well received by everyone. I will be making again.

    I had the same problem with mine so I am going to try more gelatine.

    I have been using this recipe for a while now. Everytime it comes out people go crazy for it. It has now reached a point where people keep asking me to make it for events. Its the perfect recipe, you can throw it together in less than 20 minutes and people love it. A real crowd pleaser.

    Surprised by previous comments.....

    Coulis was just right.....I used Agar Agar instead of gelatine and before setting the mixture was worrying with lumps.....but no sign of them once set.Smooth, light & creamy tmrc_emoticons.D

    This was the first time I made a cheesecake and it did not take 15 mins and it should not be set as easy. If you follow Liz's instructions re gelatine that needs to sit in the water for 10mins (thanks for that tip LizO). This should be written in step 1 so we can continue to make the cheesecake while the gelatine is soaking. The cheesecake took me an hour to make. Also I think you should state first to mill the sugar and set aside. It saves having to keep washing a drying the bowl. Also you didn't say what size tin to use. As a beginner I'm not sure what correct sizes to use re quantity. I also had to mix the mixture at step 2 and 3 for almost 45 seconds to get it smooth. The mango coulis is definitely not enough, you have to double it. And how long does this take to set in fridge? Is there a 'trick of the trade' for a newbie to know if it sets properly! Hopefully it will taste nice once ready.

    Just tried the little bit of filling I left aside. The gelatine has gone lumpy in the cheesecake mix. Anyone know how to avoid that? I warmed in the microwave and thought it had disolved well.

    OMG!! Best cheesecake ever!!! I've never made one before, and don't usually like cheesecake but I'm adding this to my list!!! Can't stop eating it! I used the tip below with regards to gelatine and added it and the cream when I added the mango & cream cheese.

    Followed the instructions but the mixture did not set and had gelatine lumps throughout.  I found out later that you should sprinkle gelatine over cold water, let stand 5 - 10mins, then warm it up gently to dissolve the gelatine before adding it to the cheesecake mixture.
