Marshmallow Fondant

Ingredients

Fondant

  • 500 g marshmallows
  • 1000 g pure icing sugar, use as required
  • Food colouring, as desired
  • 3 tablespoons cornflour
  • Vegetable shortening, Copha - to rub on hands
  • 2 tablespoons water

Recipe's preparation

    Fondant
  1. Place Marshmallows and water in TM bowl and set the time to 3 mins,50 degrees on Sp.1.

    Add 500g icing sugar and set time to 1.30mins, locked lid position on Interval Speed.

    Add another 400g icing sugar (approximately as you could use less).  Set time to 30 seconds, locked lid position on Interval Speed.

    Turn onto Thermomat and coat hands with shortening and knead lightly for a few seconds.

    Add 2 tablespoons cornflour (one at a time) and work into the icing until it is pliable.  At this stage you can add Colouring (any gel colour is best using a toothpick to get desired shade). 

    Cover prepared icing tightly into plastic wrap and then into another bag to seal out the air for storage.

    Leave for at least 24 hours before using.

Tip

Icing can be kept for months.  If it goes hard, then microwave for 10-20 seconds.

    I'd like to give this a go as I bought some commercial fondant for cookie decorating and was actually disappointed with the product. I was going to make a full batch in advance and store to use as required, but wondering how successful it would be adding the colour later in small quantities of fondant? Also does it dry to a crisp shell that would be suitable for cookies?

    arrna:I don't think it would work as it would end up an exremely stick gooy mess. Or you'd have to add heaps of cornflour which would taste awful and make the chocolate look very dull.

    So I tried this last night. Large caveat on the below, like all parents in a hurry, I didn't read the full receipe, so didn't do the cornflour bit or the leaving for 24 hours bit.

    Some takeaways :
    1 - It really does work, and creates something that smells great (I didn't taste it) and looks like fondant (at least at first).
    2 - You can make half batches.
    3 - I've finally found something that sticks to the Thermomat (maybe that cornflour is important!).
    4 - Make it and use it, it becomes very difficult to use after the first run. Do not make this in advance, roll out and expect to lay it over the cake in an hours time. It will turn into a flat a hard marshmello that will neither shape well, smooth out and will crack all over the place.

    First decorating fail I've had, there was lots of swearing.

    NeroNero:you can make this well in advance, it lasts in the cupboard wrapped in glad wrap and then in a zip lock bag for months!
    I made well in advance (as I wanted to do a practice run, and it lasted to the actual bday party perfectly) I also rolled out and assembled the day before with no issue. It tasted 10x better than those store bought ones too!! Highly recommend, I’m using again for my other child’s bday in june too!

    I would like to attempt to make icing for my son's birthday cake (am tempted to just go and buy the ready to roll icing though!) and came across this!

    Can anybody please advise if this fondant, once made can be rolled out etc and used on a cake the day before or do you have to make it and then put on the cake ASAP?

    Apologies if this is an obvious question but to a non baker, it isn't!!

    Hi! I made a batch of this yesterday as I wanted a trial run for my daughters bday cake, and its turned out great and since it made so much, and i saw it keeps for months i can just use this same batch again!!
    My question tho is how is the best way to store? Cupboard, fridge or freezer?!

    Extremely unhappy with this recipe! Actually not overly happy with the machine... i have a small cake business and thought instead of making the marshmallow fondant by hand I'd do it in the Thermomix after hearing great things about the recipe... considering it's a freaking expensive piece of machinery it really hasn't impressed me and I consider myself an advanced cook.  I know how to follow a recipe well and did so for this recipe and it made the $8 pack of marshmallows into crystal crumbs

    Only just seen this comment.  I hope you were able to work out a way to colour the fondant for your rainbow.

    Generally though  I would have made the batch of white icing and then divided it up for the colours.  Use gel colours with some copha on your hands as liquid colours will make the icing sticky again.

    Hi so glad you gave the icing a go.  

    Next time the icing is sticky add some copha on your hands and smear a bit on the mat/bench to assist with kneading.  Use the cornflour as the recipe says and if still sticky then continue with icing sugar you prefer.  It will work itself out.  Just needs a little patience. :o)

    Make sure you wrap it with plenty of plastic wrap and I even put it in a zip lock bag if you have to, to keep the air from it.  24 hours is best but can be used straight away if you are in a hurry.  Microwave for a few seconds to make pliable the next day if gone hard - then knead until it is smooth and rollable.

    Have fun with it.

    I found it sticky but worked it on a mat coated with cornflour. I used it immediately and I'm glad I did because it was too hard to work the next day. 

    Everybody loved it.

    Ive just attempted this and all i ended up with was an extremely sticky mess and coloured hands. I followed every step exactly. I ended up adding almost double the icing sugar and cornflour and it was still super sticky. Tasted great but definately couldnt be used to cover a cake. Off to the shops to buy pre made fondant  tmrc_emoticons.(

    Has anybody tried this without letting it stand for the full 24hrs? I was hoping to make this today (eek) and letting it stand for 10-12hrs then using for a birthday cake for tomorrow morning- any help would be fantastic!

    *edited to say this so worked out with only having around 14 hours, it was a touch runny but worked perfecting for the look i was trying to achieve*

    I love this recipe and am about to ice my 4th birthday cake with this fondant. I'm a complete novice cake decorator and the results have been perfect every time. I've received so many compliments about how tasty this icing is. I use coconut oil to coat my hands and colour using Hoppers natural colours - brilliant results and I can't wait to make (and eat!) it again! Thanks so much for sharing. tmrc_emoticons.)

    Made this today and used pretty close to 800 g of icing sugar, pink marshmallows didnt stop me turing it blue.  I also used coconut oil on my hands to work it on the matt. It is in the fridge resting now. 

    It depends a lot on the humidity in the air where you make it too.

    There are some really usefull youtube videos about making fondant if you arent that confident.

    The amount of icing sugar can vary.  This recipe is just a guide.  Yes it can also be sticky and I have put copha on the thermomat to help it along with the cornflour to knead To make kneading easier.

    Love this icing. I found I didn't need quite as much icing sugar as the recipe says. I couldn't find only white marshmallow's so I used a combination of pink and white but when I put in the blue food colouring it turned out a really nice blue so I was very happy The pink didn't show through.
