MKR White Chocolate Custard with Berry Compote & Macadamia Crumb

Ingredients

Custard

  • 200 grams white chocolate, broken into small pieces
  • 300 grams thickened cream
  • 100 grams full cream milk
  • 4 egg yolks
  • 1 teaspoon Vanilla Bean Paste
  • 50 grams raw sugar

Compote

  • 120 grams raspberries
  • 50 grams raw sugar
  • 1 lime, juice only

Macadamia Crumb

  • 70 grams Butter
  • 100 grams plain flour
  • 2 tablespoons brown sugar, (or coconut/rapadura)
  • 2 tablespoons raw sugar, (or extra brown)
  • 100 grams macadamia nuts

  • 120 grams raspberries

Recipe's preparation

    Custard
  1. Pre-heat the oven to 180 degrees. Line a baking tray with an oven mat or baking paper.

    Add all custard ingredients to TM bowl and cook for 7 minutes, 90 degrees, speed 4. If you're chocolate isn't in small pieces you will need to grate it first (speed 8, 5-10 seconds).

  2. Crumb
  3. Do not wash TM bowl.

    Add all crumb ingredients EXCEPT macadamias. Mix on speed 5, 5 seconds (should resemble breadcrumbs)

    Add nuts and mix on speed 5, 5 seconds. Spread mixture flat onto the prepared baking tray and cook for 15 minutes until golden and crisp. You will need to toss/stir at least once during the cooking time.

  4. Compote
  5. Clean and dry TM bowl.

    Add all compote ingredients to the TM bowl and cook for 3 minutes, 90 degrees, speed 3.

    Place into a small jug/bowl and refrigerate for at least an hour

  6. Assembly
  7. Once the custards are ready, divde the compote over each custard.

    Top with Macadamia crumb and decorate with fresh raspberries.

    The original recipe also served with a spun sugar. I tried this but failed with making the actual strings/balls, but you can see the steps on the recipe link below.

    It's visually appealing, however, very easy to make. Great for a dinner party as you can prepare it before guests arrive. The custard was way too sweet though, even for a self confessed chocoholic such as myself.  So I'll definitely reduce the amount of raw sugar in it next time.
