Ingredients

  • 100 g raw sugar
  • 200-300 g Pineapple, (very ripe)
  • 1 egg white, (optional)
  • 150 g coconut cream, tinned, (frozen into ice cubes)
  • 550 g ice cubes
  • 1 tablespoon Rum, (I used Bundaberg Rum)

Recipe's preparation

    The Day Before ...
  1. Pour coconut cream into an ice cube tray and freeze

  2. Sorbet
  3. Place sugar into mixing bowl and mill 10 secs/speed 9

     

    Add fruit, egg white (if using) and 350g ice. 

     

    Blend 20 secs/speed 10

     

    Add remaining ice, coconut cream and rum

     

    Blend 1 min/speed 10, until combined. Use spatula to assist.

    You mention thawing the pineapple. Mine was fresh, not frozen, or perhaps the pineapple you used wasn't very juicy.

    Whilst this is incredibly deeeeeelicious...... It doesnt blend as easily as the recipe would suggest.

    When adding the coconut cream and remaining ice I had to give up blitzing for about 5 mins to allow for everything to defrost a little so blitzing would be easier.

    So next time when making this, as there most definitely will be a next time, I will thaw my pineapple and coconut cream just a little and possibly skip the additional 200gm ice at the end?! Bit of trial and error me thinks! Might even chuck the egg white in last and whip with butterfly perhaps?
