Poached feijoas with licorice ice cream

Ingredients

Licorice Ice Cream

  • 400 grams Milk
  • 3 eggs
  • 65 grams sugar
  • 30 grams soft licorice
  • 20 grams cream

Poached Feijoas

  • 12 medium feijoas
  • 40 grams sugar
  • 2 star anise
  • water

Recipe's preparation

    Licorice Ice Cream
  1. Put milk, eggs, sugar and licorice into the TM bowl and cook 12 minutes 90 degrees speed 2. Chill, then freeze in ice cube trays When frozen, put back in the TM bowl with the cream, pulverise 20 seconds speed 10. Serve immediately as it will melt quickly or put it in a container in the freezer. 

  2. Poached Feijoas
  3. Peel the feijoas, they need to be very slighly unripe, a creamy colour inside. If they are ripe, or even a little brown don't use them. Add the sugar and star anise, cover with water so the feijoas start to float. Cook 25 minutes, 80 degrees, reverse, speed 1. Cool to just warm before serving with licorice ice cream.

    I used to have a feijoa tree in our backyard growing up in Victoria but I can't say that I've seen them in the supermarkets here in Brisbane. What season are they available and where do you get yours?
