Ingredients

8 portion(s)

Pumpkin Pie

  • 1 batch TMX Short Crust pastry, (Everyday Cook Book)
  • 450 grams cooked pumpkin
  • 125 grams Rapadura Sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon mixed spice
  • 3 eggs
  • 150 grams pure cream
  • whipped cream, to serve

Recipe's preparation

    Pumpkin Pie
  1. Preheat oven to 190C.

  2. Roll out and line 25cm pie dish with prepared pastry.Prick the base several times with a fork.Cover loosely with baking paper and blind bake for 10 minutes.

  3. Place remaining ingredients in TM bowl.Blend for 20 sec on Speed 5 until smooth.

  4. Pour mixture into prepared pastry crust.Bake for 45 mins until set.

  5. Serve chilled with whipped cream.

    I love the simplicity of this recipe. I had some left over pumpkin which I was intending to use for soup but made this instead. It is winter here in Australia and this reminds me so much of Fall at home (NY). Thank you for sharing. Note - I did need to cook about 15 minutes longer than the recipe suggested. I am not sure if it is my new oven (900mm) or my eggs were not fresh enough. Either way. Great recipe.

    Always wanted to try pumpkin pie , my son loves it because he's never eaten pumpkin in its typical savoury state and its nice but I cant get past the weirdness of it being sweet and kind of custardy, yet a veggie at the same time. I found that mine needed to go back in the oven for an extra 15 mins to firm up. Thank you tmrc_emoticons.)

    Thanks for this easy recipe, Lauren.  I didn't have ginger powder so put crystallised ginger which gave the pudding a delicious ginger flavour with tiny bits of ginger to bit into.  I also did not use any pastry and put only 90 gms sugar which was sweet enough for me.  It tasted so good I could have had it as a drink prior to baking it!!

    We lived in the US for two years a couple of years back, and pumpkin pie remains one of my favourite tastes that I've brought home with me. We still enjoy eating pumpkin pie to remember Fall and Thanksgiving and that beautiful time of the year when the seasons really start to change. To us, this taste symbolises happiness. Thanks for this recipe. I've always made it from scratch and it was a timeconsuming (but worthwhile) process. However, your recipe speeds it up, and let's face it, with Thanksgiving coming up next week, anything I can do to get my family's favourites on the table is a good thing!

    Yes you can use white sugar, same quantity or a bit less as I find white sweeter than rapadura or coconut sugar tmrc_emoticons.)
