Pumpkin Pie

  • 1 batch TMX Short Crust pastry, (Everyday Cook Book)
  • 450 grams cooked pumpkin
  • 125 grams Rapadura Sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon mixed spice
  • 3 eggs
  • 150 grams pure cream

Recipe's Preparation

Pumpkin Pie

1.

Preheat oven to 190C.


2.

Roll out and line 25cm pie dish with prepared pastry.
Prick the base several times with a fork.
Cover loosely with baking paper and blind bake for 10 minutes.


3.

Place remaining ingredients in TM bowl.
Blend for 20 sec on Speed 5 until smooth.


4.

Pour mixture into prepared pastry crust.
Bake for 45 mins until set.


5.

Serve chilled with whipped cream.

Thanks so much.  I have cooked this now 3 times in the last month.  2 times from scratch and today I have tried it with bought shortcut pastry, however I don't think it actually saved me much time, maybe just a little less mess to clean upi Smile  I will give the Graham Cracker version next time I think.

We lived in the US for two years a couple of years back, and pumpkin pie remains one of my favourite tastes that I've brought home with me. We still enjoy eating pumpkin pie to remember Fall and Thanksgiving and that beautiful time of the year when the seasons really start to change. To us, this taste symbolises happiness. Thanks for this recipe. I've always made it from scratch and it was a timeconsuming (but worthwhile) process. However, your recipe speeds it up, and let's face it, with Thanksgiving coming up next week, anything I can do to get my family's favourites on the table is a good thing!

You can use either. I usually just use shortcrust. The pie is not overly sweet so both would work well. Hope this helps Smile

Should I use the Shortcrust or sweet short crust pastry?

Yes you can use white sugar, same quantity or a bit less as I find white sweeter than rapadura or coconut sugar Smile

I don't have rapadura sugar. Can I use regular whit sugar instead, and if so is time same quantity?

wow, Pumpkin pie is yummy!!!  I make something very simular but I use sweet potato instead of the pumpkin.

My family had never had pumpkin piebefore  and we love it (sweet but not sickly).  I really liked the fact that you used rapadura.


Can you freeze this pie?
