  • 150 grams Raw almonds, skin on
  • 150 grams medjool dates pitted
  • pinch pink salt

  • 200 grams raw cashews, soaked for 3 hours
  • 80 grams Raw honey or maple syrup
  • 10 grams vanilla essense
  • 70 grams coconut oil
  • juice of 1 lemon

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Raw Cherry Cheesecake
  1. To make the base process the almonds, dates and salt together on speed 10.  Place in the bottom of a pie dish or rectangle pyrex container and press down hard.

    For the filling process all the ingredients on speed 10 for 10 seconds, stop and scrape down the sides.  Process again on speed 6 for 20 seconds.

    For the cherry layer, process all the ingredients until smooth on speed 10.  Pour over the cheese cake & place in the freezer for 4 hours or over night.

    When you're ready to serve, allow it to sit on the bench for 10-15minutes.  Add extra cherries for garnish.
