Raw Chocolate Avocado Mousse

Ingredients

8 portion(s)

  • 2 Ripe avocados, large, (or 2 cups of flesh from smaller avos)
  • 180 g Pure Maple Syrup
  • 30 g Coconut sugar or rapadura sugar, (or 2-4 tbsp to taste)
  • 2 tsp vanilla essence
  • 1 tsp balsamic vinegar
  • 1/2 tsp tamari sauce, (can use soy sauce if not GF)
  • 2 tbsp Cold-pressed virgin coconut oil
  • 75 g raw cacao powder

Recipe's preparation

  1. Place avocado flesh in the TM bowl.  Puree for 20secs on Sp 5.  Scrape down sides of bowl and repeat.

    (This step is optional, but I find it gives a much smoother end result)

  2. Add remaining ingredients except cacao powder & blend for 1 min, 37C, Sp 6.  The slight heat helps to melt & emulsify the coconut oil.

  3. Add cacao powder & blend for 30 secs on speed 6.  Scrape down sides of bowl with spatula & taste mixture.  Adjust balance of flavours if required then mix for another 30 secs on speed 6 or until the mousse is totally smooth & glossy (using spatula to assist if required).

  4. Can be served straight away (fantastic with fresh strawberries) or refrigerated for a firmer dessert.  

    Here, it is served with strawberry coulis (from the EDC) & vanilla bean icecream.

Tip

My daughter used non-stick egg rings as a mould for the dessert in the main picture.  This recipe can also be used as a vegan ganache when cold.

Raw cacao is the best food source of magnesium & this is such a yummy way to eat it!  Most people would never guess the ingredients in this rich dessert - don't tell them it's (relatively) healthy tmrc_emoticons.;-)

    Glad i found this recipe, i needed to make a dairy free ganache to fill a cake and it has worked well. I did alter it slightly by reducing the cocao to 50g and had to do a combo of maple syrup and honey as i ran short on syrup, even then i only added about 100g in total and was sweet enough. I must say i was scared to try this, not being a fan of Avocado, but the flavour is well hidden tmrc_emoticons.)

    I also made some subsitutions. I left out the sugar altogether and sweetened the mousse using 140g rice malt syrup and 70g maple syrup. I also reduced the cacao to 60g. I found that the flavour really improved after leaving the mousse in the fridge overnight.

    Delicious and the perfect way to use up over ripe avocados. I read the comments and halved the cacao and did a mixture of rice malt and maple syrup (also halved). I only had vanilla extract so halved that too. I'm a dark chocolate fan and this is perfect and easily sweetened with strawberries and cream for a dessert - no one would know it's not avo!

    Really amazing recipe. Made it on different occasions (only used 2/3 of maple syrup and 2/3 of sugar) and everyone totally thought it was real chocolate mousse and just could not believe it when I revealed that it was made with avocados! Love this

    Loved the consistency, prob a bit too much cacao for me (I had to add a bit of cream to dull it down) but my husband added vanilla protein powder to his and loved it. We both added strawberries as well. Prefer this to high sugar and cream content of other mousses- will definitely make again!

    Heavenly!!! I reduced the maple syrup and cacao by one-third. Served it with some slivered almonds. My husband wasn't as convinced about it, so maybe I'll increase the maple syrup next time. Looking forward to trying it with coulis and ice cream next time. Thanks for the amazing recipe!!!

    Amazing recipe!  I didnt have maple syrup so I used agave and replaced tamari with a little bit of soy.  I quartered the recipe as I was scared it wouldnt turn out and didnt want our scarce supply of avos to be wasted!  I need to go buy more avo's so everyone can try it!

    How surprising! This was delicious and mega rich. I could only eat around 2 tablespoons worth! I used 2 Shepherd avo's reduced the maple syrup to 120g and 400g of cacao. Guests didn't pick the avoid. I will be making again

    Wow! I loved this. Super easy, dairy and gluten free. I'll be making it again! I added a little pomegranate molasses in place of the rapadura because I didn't have any. 

    You could add a little chilli powder too if you were keen to give it a bit of extra kick.

    i have frozen half in cube trays and next time I feel like ice cream I can give it the sorbet treatment in the thermi and voila!!

    I did enjoy this mousse - especially the texture but found by adding orange zest it enhanced the flavour so much more. Will also experiment with mint next time. A very healthy alternative to the normal choc mousse and easy too! Thanks for a great recipe - will make this when I need a choc fix. I wonder how it would freeze? Will have to give it a go when I make a big batch!

    Sorry for the delayed reply, Paula.  I took a bit of a break from the world of Thermomix tmrc_emoticons.;)Rapadura sugar could be used instead.  You could even use raw sugar, but I posted this recipe with a focus on the most nutrient-dense options possible.  Both coconut sugar (& rapadura) & coconut oil are available from Health Food Stores or online.  You can also get coconut oil in the Asian food section of major supermarkets. I'm not sure that other oils would work so well.  As the coconut oil solidifies when cool, it adds to the texture of the dish.  Liquid oils would result in a much  runnier/softer mixture that would not set firm enough to shape in any way.

    This is really yummy!! The kids had no idea it was avocado. My son was alarmed when I finished making it and he saw me putting it in a bowl that had a smidge of avocado in it, but I didn't spill the beans...

    I substituted a few items for whatever I had in the house. I used a bit of treacle and golden syrup instead of maple syrup, I used whole cacao nibs and ground them at the start, and I used Bragg All Purpose Seasoning instead of Tamari (because the bottle had fallen over and I couldn't find it!). The cacao gave it a really nice slightly crunchy texture.

    I think I will try it next time we have people over... tmrc_emoticons.D

    I made this last nigjt for a dinner party and it was incredible!!  I couldn't stop eating it!!  It's SO delicious!

    I used 100g of honey in place of the maple syrup and it worked perfectly.  

    I served it in martini glasses with a thin layer of sweetened cream and strawberries. I highly recommoned this recipe to anyone.  It is very easy and very yummy!   tmrc_emoticons.)  Thanks for the recipe!!

    Yep, agave will work fine, too.  I think the original recipe uses agave if my memory serves me correctly (which it doesn't always).  I prefer the lower fructose level of maple syrup, which I is why I use that, but any similar syrup should yield a similar result tmrc_emoticons.)  I'm glad you liked it  Big Smile
