Raw Peppermint Slice

Ingredients

Base

  • 100 g pecans
  • 90 g buckwheat
  • 30 g cacao powder
  • 1/2 tsp salt
  • 15 medjool dates, pitted
  • 2 tsp coconut oil

Peppermint Cream

  • 160 g Cashews, soaked 2 hours
  • 90 g coconut oil
  • 125 g Maple syrup
  • 50 g Shredded coconut
  • 4 drops Peppermint Essential Oil
  • 1 tsp vanilla paste/essence
  • 2 pinches salt

Chocolate Spread

  • 100 g Cashews, soaked 2 hours
  • 90 g coconut oil
  • 35 g cacao powder
  • 70 g Maple syrup
  • 1/2 tsp vanilla paste/essence

Recipe's preparation

    Base
  1. Add pecans, buckwheat, salt and cacao and mill on speed 8 for 10 sec until nuts have nicely crumbled.

     

    Add the coconut oil, then the medjool dates, process on speed 8 for 20 sec until a sticky mixture that holds when pressed together.

     

    Line a 22-23cm square baking tin with baking paper.

     

    Press the dough evenly into the bottom of the tin. Freeze to set.

     

     

    Clean & Dry Bowl.

  2. Peppermint Cream
  3. Rinse & drain soaked cashews using steamer basket for both 160g mint cream and 100g choc spread layers.

     

    Weigh into TM bowl 160g cashews with all mint cream ingredients.

     

    Blend everything till nice and creamy on speed 9 for 60 sec.

     

    Spread evenly over the biscuit layer and set in the freezer.

     

    Clean & Dry Bowl.

  5. Blend everything till nice and creamy on speed 9 for 60 sec

     

    Spread the ganache over the top of the peppermint cream layer, but only once the cream layer has set.

     

    Set in the freezer.

     

    Cut into small squares to serve.
