Rekorderlig strawberry-lime cider cupcakes with lime cream cheese frosting

Ingredients

24 portion(s)

Cupcake

  • 24 --- cupcake liners
  • 4 --- eggs
  • 200 g Butter (Softened)
  • 625 g caster sugar
  • 750 g self-raising flour
  • 250 g Rekorderlig strawberry-lime cider, equivalent of half a bottle

Cream Frosting

  • 500 g cream cheese
  • 500 g icing sugar
  • 1 --- punnet strawberries, for decoration
  • 2 Limes

Recipe's preparation

    Cupcakes
  1. Preheat fanforced oven to 180C

    Place butter and caster sugar into mixing bowl and mix 40 sec/speed 5.

    Turn down to speed 1-2 and add one egg at a time, until combined - don't over mix.

    Add flour and cider and mix 1-2 min/speed 5 (using spatula is needed).

    Put mixture in liners and bake for 15 mins or until cupcakes are "springy" to touch.

    Remove cupcakes and let cool.

  2. Cream Frosting
  3. Place cream cheese and icing sugar into clean, dry mixing bowl and mix speed 5 until combined. Add lime juice to taste.

    Add a touch of green food die to get a desired colour.

    Pipe onto cold cupcakes and decorate with half a strawberry.

Tip

This recipe makes many cupcakes, halving recipe will still make enoug for a family.

May use other ciders, just change the frosting to become a desired taste relevant to cupcake!

    i have these in the oven now - only 12 at at time, but have already hit 20 minutes and they are still not cooked in the middle... help................. i have lowered the temp to 160 as they were browning a little too much on the top... any ideas??  does it really only take 15 minutes to cook

    I love cider so was so ecited when I saw this recipe and have been waiting for an opportunity to make them.  Very happy with the results but I do have a few amendments - I only used 300g of sugar & feel this is plenty considering the sweet cider (taste testers also agreed they were sufficiently sweet) and as I found the mixture was too dry I added in the whole 330ml can of cider.  It makes closer to 48 cupcakes depending on how much you fill each case.  Halve the icing mixture as 500g cream cheese + 500g icing sugar is WAY to much.  But to make this quantity of icing I used 50g of lime jucie which was 2 limes.

    Party Bloody beautiful, I made these for my daughter's 21st as she loves Rekorderlig. They were an absolute hit and I will definitely be making them again and again and again.  Big Smile

    I ended up using the butterfly as the flour wasn't mixing through thoroughly !

    tmrc_emoticons.(The recipe clearly states it makes 24 cup cakes.  Therefore I divided the batter between 24 patty cases and they spread so much they basically made 1 big cake on each baking tray and were unuseable.  So complete waste of time and ingredients and now I have nothing to take to my function tomorrow.  Suspect the recipe really makes about 40 cupcakes so why not just say this?  Shame because they tasted quite nice.
