Rizogalo (Greek Rice Pudding)
- 400 g water
- 90 g rice, medium grain
- 1000 litre Milk
- 100 g sugar
- 1 tsp vanilla, sugar or essence/extract
- 80 g cornflour
- 100 g chilled water, to mix with cornflour
- dash cinnamon, for garnish

Recipe's preparation
- Insert butterfly and place water and rice into bowl. Cook for 14min on 100º,"Counter-clockwise operation" speed 1.5.
Add the milk and both sugars/essence and cook for a further 14min on 90º, "Counter-clockwise operation" speed 1.5.
Mix cornflour in a cup with chilled water till dissolved and pour into bowl. Cook for 3min, on 90º, "Counter-clockwise operation" speed 1.5.
Pour mixture into small bowls and sprinkle with cinnamon. Allow to cool then place in fridge.

Rita Zwanink: You can adjust the rice if you like. I have it at 90g and it works well for my family and their tastes. You can increase the rice and lessen the cornflour if you prefer though.

KitchnQueen: I'm really sorry you didn't like the recipe. I will have another look and play but I can assure you, it is for my Greek Family, a traditional recipe. This is my mums recipe and she was born and raised in Greece. Mastic is an option and depending on where you come from in Greece, there are many different variations. Recipes are all about tweaking to suit ones palate. I find even though I love a recipe, I will usually still tweak to my liking. I think the recipe may need actual grams for the cornflour, so there is not room for error. I will have a look am adjust where needed. Thank you for the feedback. Maybe for future reference, there is no need to be rude. We are all just trying to share our favourite recipes.

Not sure why this recipe has a 4.1 rating. Especially after reading comments when most needed to tweak it.
I found the same, need to tweak it to make it ok.. too much liquid to rice, more like a canned creamed rice x cornflour congee. Too much liquid to how much rice.. my Zio used to use mastic, so added to it and found it saved it a bit.. he made the best rizogalo ever.. I wouldn't say this recipe was traditional.. if I'm comparing to what my Greek side of the family made. My Zio would be eye rolling.

Tastes lovely but I only put in 400g water and 750g milk and was still very wet so I added even more cornflour .. end result according to the kids is it tastes just the Cafe Gardenias (which they love) now for it to cool thanks

Have just tweaked the recipe,
Have just tweaked the recipe, after speaking to my mum. I've trialed it and it worked really well. In case you are wondering what the difference is, I've added 1 minute to each of the cooking times and upped the water. A tip is that the 5tbsp of cornflour must be super heaped. Enjoy.

I increased the rice content
I increased the rice content and although enjoyable, it still wasn't quite right. Next time I'll decrease the milk content and that should make it just right.

I think I do need to adjust
I think I do need to adjust this a little to get it thicker. Less milk and a little more rice and it should be lovely and thick. Will try and alter the ingedient quantities very soon.

I have made this recipe a few
I have made this recipe a few times and i really like it. My husband lost his mum 8 years ago so its hard to find a recipe that reminds him of her cooking, and this was one of those. I just used a little less milk/ or a bit more rice, so that it isnt completely swimming in milk.

I loved this! Absolutely
I loved this! Absolutely delicious. I found the quantity of milk to be just right, it thickened up considerably in the fridge. I added vanilla bean paste rather than vanilla sugar.

I haven't tried this yet but I think the milk quantities are wrong too. 1000g is the same as 1 litre and 85g of rice is just not enough rice to absorb that quantity as well as the water.

Fantastic best rice pudding
Fantastic best rice pudding recipe in my hands compared to my other attempts. My kids loved it. Not too sweet so a great snack. I had to add another tablespoon cornflour (used the measuring cup to estimate 5 tablespoons=100mls) so ended up with 6 tablespoons to avoid it being too runny. Thanks.

I'm not sure. I've never tried as arborio tends to become very thick and sometimes gluggy but you're more than welcome to try and let me know how you go. It might be just the tweak to perfect the recipe. Perfection usually comes from trial and error.

Hi Katy, it sounds like it wasn't thick enough. Did you use the cornflour to thicken at the end? Sometimes, depending on whether you are using an actual tablespoon measurement or just your ordinary tablespoon, it may need more. I haven't converted the tbsp to grams which I should do but if you can see it doesn't thicken up straight away while adding the cornflour, just mix up another 2 tablespoons with cold water and add that. That will definitely do the trick. Hope all goes well.

Greeks tend to use the 1.5 setting even though it doesn't really exist but I'm too scared to change it as it works wonderfully with this recipe.
