Rocky road ice cream

Ingredients

10 portion(s)

  • 100 g Dark chocolate (70% cocoa), broken into pieces
  • 800 g pouring (whipping) cream
  • 200 g full cream milk
  • 200 g raw sugar
  • 1 pinch sea salt
  • 1 tsp natural vanilla extract
  • 4 egg yolks
  • 2 tbsp cocoa powder
  • 100 g halved macadamia nuts, raw
  • 100 g mini marshmallows (pink, white)
  • 100 g white chocolate chips (good quality)
  • 100-110 g Turkish delight (2 small bars), cut into cubes
  • 2 tbsp shredded coconut

Recipe's preparation

  1. Place chocolate into mixing bowl and grate 10 sec/speed 9.

  2. Add cream, milk, sugar, sea salt, vanilla extract and egg yolks and cook 8 min/80°C/speed 4.

  3. Add cocoa powder and mix 10 sec/speed 5. Distribute mixture evenly between two containers then freeze for 3-4 hours until firm, but not competely frozen. Clean and dry mixing bowl.

  4. Place macadamia nuts into mixing bowl and lightly crush 1 sec/Closed lid/Turbo. Set aside.

  5. Remove one container of ice cream from the freezer and cut into ice cube-sized pieces. Place ice cream pieces into mixing bowl and blend 15 sec/speed 9. Then mix 10 sec/speed 4.

  6. Add 50 g of the marshmallows, 50 g of the white chocolate, 50-55 g of the Turkish delight, 50 g of the crushed macadamia nuts and 1 tbsp coconut and mix 10 sec/Counter-clockwise operation/speed 1, or until combined. Place mixture into a large container and set aside.

  7. Repeat steps 5-6 with the second container of chocolate ice cream and remaining macadamia nuts, marshmallows, white chocolate, Turkish delight and coconut. Place in container with the first batch and stir through with spatula. Return to freezer for another 3-4 hours prior to serving.

  8. To serve, scoop ice cream into ice cream cones, glasses or bowls.

    Very nice. Good quality. I accidentaly put my ice cream in the fridge and not the freezer so some of my ice cream reverted to custard. Still though. Good recipie. I recommend placing it in the fridge 20 mins before eating.

    sooooo yummy and creamy, mine did also take awhile to freeze so my marshmellows floated to the top and choc chunks and nuts to the bottom. I used cashew instead of macadamia, was still tasty but slightly softer. Love the idea of using clinkers!

    Loved it!  I did the first freeze overnight and just left it on the counter for about half an hour to thaw enough to get out the containers to do step 2.  Its probably not so great for any diet plans as a small spoonfull is defiitely not enough.

    I made on the weekend for Father's day.  It was so delicious. However took well over 5 hours to set (freezer too full??), I just kept going after 5 hours so I could add the chocolate chips, coconut and Turkish delights.  It was not 100% set at consuming time BUT I had no complaints by those that consumed. I also halved the sugar (I find many TM recipes have too much sugar) and didn’t have marshmallows so they got left out

     

    Will defo make again, maybe with different goodies (like gummi bears).

    Loved the ice cream so much, I decided to reduce to sweets by half so we could enjoy the ice cream more! I find it a bit too sweet, though, so I would reduce the sugar next time. I used Callebaut chocolate, and omitted the cocoa cause hubby likes rocky road but not so much chocolate ice cream. It was amazing.

    Hi everyone, if your marshmallows are rising to the top you might just need to give the icecream a stir after an hour of freezing to make sure everything is evenly distributed.

    This is really nice, i think i skip the coconut next time as i'm not a huge fan. I found the marshallows floated to the top as well but still tasted yum and i used allens snakes instead of turkish delight. I will defin make this again.

    OMG this is amazing! Yes it does take a bit longer to freeze, but you need to wait that bit longer otherwise the heavy stuff sinks and the marshmallows float. Have made it a few times now and it's always a winner!

    Yummy flavours but a bit icy. I forgot to get it out of the freezer so ended up being in there for about 7 hours! Oops! But it still hadn't properly frozen anyway - in parts but the middle was runny. So I kept going with the process. 

     

    So the end result was icy & the chocolate & Turkish delight had sunk & the marshmallows were floating tmrc_emoticons.)

    My freezer must not be very good because after 4 hours the icecream was still runny.... I continued on anyway only to find the marshmallows floated to the top and Turkish delight sunk to the bottom then took longer than 4 hours to freeze again even after I'd turned freezer up to high... Still tasted really yummy!

    I made this for Dad for fathers day - he loved it! I used clinkers instead of nuts (crushed them up the same), and soft jubes instead of turkish delight - beware the jubes are very hard when frozen.. so they weren't such a great idea. First time making ice cream and I was delighted!
