Semolina Custard

  • 60 g to 100g Sugar to taste
  • 3 egg yolks, or 2 whole eggs
  • 1/2 cup semolina, or 100g
  • 3 cups milk, or 750ml
  • 1 tsp vanilla sugar or essence
  • 1 tsp Butter

Recipe's preparation

    Semolina Custard
  1. Place eggs and sugar into bowl and mix for 1 minute on speed 6 or until mixture has paled in colour.  Scrape down bowl.

  2. Add semolina and milk and cook for 7 minutes at 90C on Reverse + speed 4.

  3. Once thickened add vanilla and butter and mix on Reverse + speed 3 for 10 seconds or until just combined.

Tip

I've used 2 whole eggs and works just as well.

Can add cinnamon on top and can be served as breakfast or dessert.

Can also be used as a filling to a cake.

Depending on desired thickness, can use between 80g to 110g of semolina.

    I doubled the mixture and used it as filling for my Galaktoboureko. 200g sugar, zapped a couple of times to fine it, 4 whole eggs and the vanilla. Whisked it as the recipe says. Than I added 200g semolina and whisked it into the eggs for a few seconds. Then the milk. 90C, Sp 4 (reverse) for about 11 minutes, or until thickened. Perfecto!

    This is so delicious. I made it with one whole egg and one egg yolk just because I didn't want to throw away 2 egg whites. It was delicious served warm as soon as it was cooked but equally just as yummy served cold the next day. I need to stop eating it!

    I added some cinnamon too coz we love it.
