Sticky Date Cheesecake Slice with Caramel Fudge Sauce

Ingredients

Base

  • 100 g butternut snap biscuts
  • 20 g coconut oil

Filling

  • 125 g Fresh pitted dates
  • 375 g cream cheese, Softened
  • 75 g castor sugar
  • 1 tsp Vanilla Bean Paste
  • 1 egg
  • 1 tsp plain flour

Caramel Fudge Sauce

  • 175 g brown sugar
  • 80 g coconut oil
  • 80 g cream
  • Icecream or cream, to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. Preheat oven to 160`C, grease and line a 9cm x 20cm loaf tin.

  2. Place broken biscuts and butter into mixing bowl, mix 5 sec/speed 5.

  3. Press mixture into prepared loaf tin and chill

  4. Filling
  5. Place dates into mixing bowl and roughly chop 5 sec/speed 7. Set aside.

  6. Place cream cheese, caster sugar, vanilla and blend 10 sec/speed 6

  7. Add egg, flour and reserved dates Counter-clockwise operation 5 sec/speed 4, 

  8. Pour mixture into prepared loaf pan, bake in oven for 25min. Let cool with oven door ajar. Chill.

  9. Caramel Fudge Sauce
  10. Place brown sugar, coconut oil and cream into mixing bowl and cook for 5min/80'/speed 4

  11. To Serve
  12. Cut the cheesecake slice into 8 portions, drizzle with caramel sauce and servce with a scoup of ice cream or cream.

Tip

You can cut the dates finer if you like.

It is quite rich, the ice cream evened that out a bit
