Summertime Peach Pudding
- 6 Ripe Peaches, cut into quarters and stones removed
- 4 heaped teaspoons caster sugar
- 1 vanilla pod, cut lengthwise and seeds removed
- 1 teaspoon honey
- 3 tablespoons water
- 125 g Butter, at room temperature
- 125 g caster sugar
- 2 eggs, at room temperature
- 125 g Self Raising Flour

Recipe's preparation
Preheat oven to 180 degrees.
Put peaches, caster sugar, vanilla pod seeds, honey and water into TM bowl and cook for 10 minutes at 70 degrees on "Counter-clockwise operation" +"Gentle stir setting" .
Pour into a greased oven proof dish or bowl.
Without cleaning TM bowl, put butter and sugar into TM bowl and mix for 30 seconds on speed 5. Scrape down bowl with spatula.
Add eggs and mix for 5 seconds on speed 5. Scrape down bowl with spatula.
Add self-raising flour and mix for 10 seconds on speed 5.
Spread batter over the peaches and bake in the oven for 45 minutes.
Serve warm with fresh whipped cream or vanilla ice-cream.

Very nice! Easy to make. I think next time I will cook double fruit as didn't seem to be enough on the base of the dish. Would have loved apple & peach combo or Apple & rhubarb combo. Served with custard from Mrs mix recipe on site and whipped cream. beautiful!

This was easy, delicious and helped me get rid of a glut of under-ripe peaches I had mistakenly purchased. I cooked the peaches at 100 degrees for about 8 minutes and they didn't lose their shape, adding the same ingredients. I made the pouring custard from the EDC and it was all demolished within 5 minutes. Thanks for sharing!

my husband loved this
my husband loved this pudding. I did too, but found i actually enjoyed it more when it was cold. (there's only 2 of us, so we had it fresh out of the oven, and then as cold leftovers after that.) I found it very refreshing.
Only had canned peaches so
Only had canned peaches so only cooked for 2 mins and didn't add the water. Also reduced the sugar (for the peaches) to only one teaspoon - probably didn't need any. Also cooked in individual ramekins, very yummy with ice cream!
