Thai Mango Dream with Sticky Rice & Salted Coconut Sauce

Ingredients

Rice

  • 250 grams glutinous rice

Syrup for Sticky Rice

  • 160 grams coconut milk
  • 1/2 tsp salt
  • 90 grams Sugar (Use Palm or White)

Salted Coconut Sauce

  • 200 grams coconut milk
  • 1/4 tsp salt
  • 1 tsp cornflour
  • 1 tablespoon water

Mango Dream

  • 50 grams palm sugar
  • 600 grams frozen mango
  • 40 grams coconut milk
  • 1 egg white

Recipe's preparation

    Making the Rice & Syrup
  1. Wash 250g Glutinous Rice in water until the water is clear (5-6 times).Soak in water for a minimum of four hours; overnight is preferable. Drain excess water from the rice. 

    When the rice is ready to be cooked, line the varoma with wet baking paper. Place rice onto the paper and steam for 25 minutes/varoma/spd 4. Using 500g water in the bowl, to steam. Place into Thermoserver immediately.

    Make the syrup for the rice as soon as the rice is in the Thermoserver. Combine 160g Coconut Milk, 1/2tsp Salt and 90g Sugar and heat 4 mins/90/spd 3.

    Pour warm syrup over hot rice. After 20 minutes, gently stir. Leave for another 20 minutes so liquid has all been absorbed. 

  2. Salted Coconut Sauce
  3. To make the salted coconut sauce, place 200g Coconut Milk, 1/4tsp Salt, 1 tsp Cornflour and 1 tbs Water into bowl. Heat 3 mins/90/spd 3. (Or until it thickens/boils). Allow to cool slightly.

  4. Mango Dream
  5. For the Mango Dream, chop 50g Palm Sugar, 10 sec/spd 10.

    Add 600g Frozen Mango and chop 10 sec/spd 10, or until all lumps are gone.

    Add 40g Coconut Milk and 1 egg white.

    Stir 10 sec/spd 6.

     

    Add butterfly, mix 1min/spd 4.

  6. Serving
  7. Serve Sticky Rice on bottom, followed by Mango Dream and then top with Salted Coconut Sauce

Tip

Thsi can also be made with Banana in lieu of Mango.

    I am going to make it tomorrow and noticed the same thing! I have now amended the recipe to include the rice component

    Usually the rice needs to be soaked for a long time before being cooked, I can't seem to find that in this recipe so does it not make much difference if its not soaked before hand?
