Walnut Pie with Caramel Sauce

Ingredients

Pastry

  • 40 g raw sugar
  • 250 g plain flour
  • pinch salt
  • 180 g unsalted butter
  • 1 egg yolk
  • 2 tbsp iced water

Filling

  • 150 g walnuts
  • 150 g raw sugar
  • 2 eggs

Caramel Sauce

  • 40 g unsalted butter
  • 160 g brown sugar
  • 2 tsp vanilla extract
  • 200 g Pouring Cream

Recipe's preparation

    Pastry
  1. Preheat oven to 180

    Grease a 23cm fluted flan or pie tin with butter

    Add sugar to the bowl and mill 30secs / sp9

    Add flour, butter and salt and mix for 5 secs / sp 6 or until the mixture resembles fine breadcrumbs

    Add the egg yolk and water. Set dial to closed lid position and mix for 20 secs / interval speed. The dough will be soft and sticky. Wrap in a thermomat and place in the feezer for 15 minutes while you get the next step ready

  2. Filling
  3. Place walnuts in a clean bowl and chop 1 sec / sp 5. Set aside

    Place sugar in the bowl and mill 5 secs / sp 9.

    Insert butterfly,

    Add eggs and mix 1 min /sp 4

    Remove butterfly

    Add walnuts and mix 5-10 secs / sp 1

     

  4. Putting it together
  5. Roll out 2/3 of the pastry on a lighty floured surface to a size that will cover the flan/pie dish , lift and place in the flan dish. Trim the edges

    Pour in the walnut mix.

    Roll out the remaining 1/3 of the pastry and place on top of the pie shell and filling and seal the edges so the walnut filling is covered. 

    cut a few steam holes (just pierce the top with a knife a few times)

     

    Place in the preheated oven and cook 25 min until golden brown. Allow to cool

  6. Caramel Sauce
  7. Place all ingredients in the bowl and cook for 5 mins / 80 C / sp 4  

    Pour hot over the pie

     

    Serve the pie with the caramel sauce some fruit salad and a dollop of greek yoghurt. Enjoy
