Almond Milk

Ingredients

2 litre(s)

  • 1 cup of raw almonds
  • 1/4 tsp salt
  • filtered water, for soaking
  • 1.25 litres filtered water, for blending

Recipe's preparation

  1. Soak the almonds in a glass or ceramic bowl for 24 hours with the salt and enough filtered water to cover the almonds by 3-4cm. If you remember, change the soak water after 12 or so hours.

     

    Drain and rinse the soaked almonds well. Place with 1.25 Litres of fresh filtered water in TM bowl with the soaked almonds and blend on speed 9 for 90 seconds.

     

    Strain mixture thorugh a nut milk bag or fine straining cloth. Gently massage the mixture to help seperate the milk from the remaining fibre. Don't squeeze your bag too hard or you may burst the seams and squash fibre through.

     

    Store milk in glass jars in your fridge and use within 3 days. You can make the milk richer by soaking more almonds to the same amount of water, but it can get expensive.

     

    Soaking helps to deactivate substances that are stopping the nut/seed from growing, particularly protease inhibitors (protease is an enzyme that helps break down protein). Soaking also aids the removal of anti-nutrients like phytates that can interfere with mineral absorption; however phytates are more of an issue in grain foods.

     

    When soaking grain foods for cooking, like rice and quinoa, the addition of an acidifier helps with the phytates such as whey or lemon juice. For nuts and seeds, the addition of salt to the soak water helps with the removal of the enzyme inhibitors. Eating nuts and seeds after they have been soaked is more kind to our digestion and improves nutrient availability.

    Hi i tried to make this today and the milk kept leaking out of the top of the thermomix. I am assuming i must have a seal issue. Has anyone else found this?
    I ended up doing half the mix at a time.
    Milk still tasted nice.

    Such a great easy recipe. I made half a batch as I am the only one drinking it - I added 4 stoned medjool dates and 1 tsp vanilla essence. Perfect. Trust me you won't buy bought almond milk after you have tried this.     Almond milk - I love that this recipe has no added sweetners. Like @miargy, I also make a half batch using 100g almonds and 620g water which lasts me for the week, I also use the pulp for a half batch of chocolate almond pulp brownies (they are delicious!). Thanks for sharing this fabulous recipe, thanks also for the additional info on soaking grains/nuts. I don't know why I waited so long to make this!

    I was thinking I might need to add dates because some unsweetened almond milks are bland and yuk tasting. This almond milk is creamy and great tasting!

    This is a simple and delicious recipe. I'm the only one who drinks almond milk but when I make it I have it for brekkie, in my coffee and as a Mid afternoon drink. Gone in no time. I also use 2 cups of almonds to the same amount of water... So creamy!

    I will use some in cakes, either wet and used that day, or I dry it and blend into a flour and use a bit here and there in other things calling for flour. Or I compost it.

    My first successful attempt at Almond Milk and it was a big hit! My grandadughter enjoyed it by itself, while I had the best coffee I have had all year. No more store bought for me.

    I didn't get 2 litres from it though.

    You are absolutely right. I just thought it might be nice to know about the boiling water for those, for whom the raw/unheated part is less important than the storing time (we don't use up this amount of almond milk fast enough...) 

    Sorry about the confusion with my translation. I meant any glass container that created a vacuum such as the one you used in the photo, reused glasses of jam/marmalade/pickles/etc. Anything that makes a plop sound when you open it. Personally, I use smaller glass smoothie bottles I bought, drank and reuse, so I have amounts of 200-300 ml ready to use in overnight oats.

    Regarding the use of boiling water - I am not saying you can't do this but it is different to my recipe which is all about making raw/unheat-treated almond milk which I don't recommmed using after 3 days. heating it may well see it last longer but I dont know as I haven't tried it.     So much better than store bought! Thanks also for the soaking tips. I will soak rice and quinoa before cooking as my son says he gets indigestion from both, but only when they are cold ie when I've made a salad for him to take to work. Will see if soaking helps. 

    So many recipes to try, but so little time!
