Baileys
- 200g milk chocolate, melts
- 400g can sweetened condensed milk
- 750ml cans evaporated milk, 2 x 375ml cans
- 300ml pure cream, 300ml
- 1 tbsp instant coffee, dissolved in 3 Tbsp boiling water
- 700ml bottle whisky, Jamiesons is recommended

Recipe's preparation
- Place chocolate in TM bowl and grate 10 sec / speed 9. Scrape down.
- Melt chocolate 5 mins / 50°C / speed 3. Scrape down.
- Add condensed milk and mix 5 mins / 50°C / speed 3.
- Set TM 2 mins / 50°C / speed 3 and while blades are moving, add both cans of evaporated milk, cream and dissolved coffee.
- Pour mixture into a 3 litre jug.
- Pour whisky in TM bowl and 'clean the bowl' 5 sec / Turbo.
- Pour whisky into jug and mix with aid of spatula.
- Pour into bottles and keep refrigerated up to 3 months.
- Pour any mixture that won’t fit into bottles into a glass.
- Add 2-3 cubes of ice.
- Drink immediately and admire your work.

The Baileys will last for 3 months if stored in the fridge.
Contents of bottle/s will settle and give the appearance of 'splitting' - this is normal. Just give bottle a good shake to re-mix ingredients before each use.
This recipe was given to me by a liker on my ThermoFun facebook page asking me if I could have a go at converting it for the Thermomix. As a very fond lover of Baileys myself… well I could hardly say no now could I?!

This makes a huge amount, 2 1/2 litres! It is absolutely delicious, I made it exactly as per recipe except that I used 180g of Cadburys Old Gold chocolate instead of the melts. I've always made my own Irish cream and this was the first time using this recipe, it's the best one that I've ever made.

I've seen this recipe for homemade Irish Cream Liquor around for a while but was never really interested. I mean Baileys is alright but I tend to like mixing lots of different drinks so just pouring out a drink of Irish Cream over ice is nearly boring in my books. My view of this changed when we were given the lovely gift of a bottle of home-distilled Grappa (700ml!). It was just too strong and not to our liking to drink neat and I was not inspired to use it in cocktails.
So I came up with the idea of making this recipe using the Grappa. I am blown away! It's so much more than the bought stuff. It tastes delicious on so many levels! I basically just want to drink it all the time now.
Why am I writing this? Because I have seen lots of discussion on which Whisky to use for this recipe and I want to encourage everyone - use what you have. Have you been given a bottle of alcohol that is not to your liking? Use it! I bet it could be done with vodka, whisky, brandy, rum.... well and Grappa. Wouldn't recommend Gin due to the herbal notes in it but hey, even that might end up tasting spectacular

That being said, i wasnt a huge fan as i thought it tasted like straight whisky haha. Although i didnt have any ice so perhaps thats why haha.

Hi, could someone please enlighten me. If you need 700ml of Whisky for this receipe which is $40 a bottle (when on special), then why wouldn't you buy the real Baileys at $25 for a 700ml? Surely it is more cost effective to buy it than make it? I am being genuine here- I came on to make it and really would like to know the perks of making instead of buying if it isn't cost related?
