Chai mix
- 75 grams raw sugar
- 200 grams milk powder
- 2 level teaspoon ginger ground
- 2 level teaspoon cardomom ground
- 2 level teaspoons cinnamon ground
- 1 teaspoon nutmeg ground

Chai latte (per serve)
- 250 grams Milk, per serve
- 3 heaped teaspoons chai mix
- 1/4 teaspoon cinnamon sugar, for garnishing

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Add sugar to bowl and mill for 10 sec/sp9
Add all other ingredients for the chai mix and mill for a further 20 sec/sp9
Store mix in an airtight container.
Add milk to bowl, approx 1 cup per serve (depends on the size of your cup/latte glass/mug) and add 3 heaped teaspoons of the chai latte mix per serving you are making.
Heat milk for 3 mins/75°c/sp2 with mc in.
To froth the milk, keep mc in, gradually turning speed up, for 25 secs/sp8.
Pour into glass/cup and garnish with cinnamon sugar.

Tip
If you prefer your milk hotter increase temp to 80°c. If doing more than one serve increase heating time by 20%

My tips.. LACTOSE FREE - use 200 grams of Coconut Milk Powder
add 1/8 teaspoon white peppercorns when grinding sugar., makes it real spicy, use black if you don't have white.
Double Cloves to 1 teaspoon total.
Cinnamon I used 3 teaspoons total.

Such a beautiful chai mix! I doubled the batch because I love chai and now I have it readily available to make a cup. I read the comments first and added more cinnamon ground in the mix. Otherwise I make it as per the recipe and it is delicious. Anyone who loves a cup of chai should give this recipe a go - you won't be wasting your time and will be able to have a cup whenever you feel like it. Great to have in lockdown. Made a batch today for first time as mother's day gifts. Upon having a mug (made on kettle boiling water & milk) I felt it needed something slightly different for my taste. I added more Cinnamon to make it 3tsp and made a mug in the TM6 as per recipe & super yummy. I think mixing it to hot & frothy definitely helps.

You could use skim milk
You could use skim milk powder and skim/reduced fat milk and maybe use a bit of honey to sweeten instead of putting sugar in the mix. Add the honey each time you make it.
