Creamy Fish Curry in a Hurry

Fish curry

  • 600 g fish fillets, Cubed
  • 400 g coconut milk
  • 500 g Brocolli, Chopped
  • 30 g korma curry paste
  • 15 g ginger, Peeled
  • 1 clove garlic
  • 15 g brown sugar
  • 30 g fish sauce
  • 30 g coriander
  • 30 g flat leaf parsley
  • 10 or 20 g lime juice

  • 1 tbsp cornflour
  • 1 tbsp water

Recipe's preparation

  1. 1. Chop coriander, parsley, garlic and ginger, 3sec/Speed 8

     

    2. Add coconut milk, fish sauce, korma curry paste, brown sugar and lime juice. Blend for 5sec/Speed 5

     

    3. Add brocolli, cook 5min/100C/Counter-clockwise operation/Gentle stir setting

     

    4. Add fish and cook a further 5min/100C/Counter-clockwise operation/Gentle stir setting

    (If a thicker curry is desired, add the cornflour mixed with water in the last 2min of cook time)

     

    5. Serve with rice and garnish with coriander

    I didn't have korma so used red curry paste and subsituted green beans for some of the brocolli as I didn't have enough.  It turned out much better than I expected and although hubby didn't like the smell he had seconds!

    Excellent fish curry. 2.5yo ate it too. I reduced fish to 300g and increased parsley and coriander to 50g each, and still found the sauce thick and creamy. Fast and easy to make. Will make again.

  • Disaster!  I followed

    Disaster!  I followed everything except the korma curry paste, and I had never heard of that, so I used keens.  It tasted of nothing except ginger. The sauce was not creamy - not even thickened, and I added the cornflour when the recipe said to - it was like water.  It did not even taste like fish!!  My beautiful fish was nothing but ragged little pieces. Sob!  Why was mine different?
