Ingredients

Quinoa Crust

  • 150g White Quinoa
  • 900g water
  • 70g Cranberries
  • 70g Pistachios
  • zest of a lemon
  • 20g oil
  • 6 Salmon portions

Vegetables

  • 900g water
  • 300g sweet potato
  • 4 zucchini
  • 20g butter

Recipe's preparation

  1. Preheat Oven to 190 Degrees

     

    Place Quinoa in TM Basket and water in TM bowl

    Cook  Quinoa 15 minutes/ 100 degees / Speed 3. Set aside.

    Place lemon zest in TM  bowl. Grate5 seconds / Speed 8.

    Add Cranberries and Pistachios Turbo 1 second.

    Return cooked quinoa, and oil to TM bowl.Counter-clockwise operation"Counter-clockwise operation" 3 seconds Speed 3

    Firmly place quinoa crumb on Salmon and place in oven - for 12 - 15 minutes. Set aside to rest.

  3. While Salmon is cooking in oven - prepare vegetables.

    Place cubed Sweet Potato in TM basket with 900g water in TM bowl.

    Cook 15 minutes/ 100 degrees/ Speed 2

    Meanwhile with a melon shredder make zucchini ribbons.  During the final 5 minutes of cooking Sweet potato place Zucchini in Varoma tray and steam .

    Remove basket, tip out water  and place sweet potato in TM. Blend 30 seconds/ Speed 5. Place  butterfly in TM and whip Sweet potato 30 seconds /speed 3  adding butter while whipping.

     

     

  4. Great as a shared plate for a celebration

Tip

When cooking a side of Salmon additional cooking will be required.

Can be served hot or cold

    I only did part the crusted quinoa and served it with salad... but it was devine.. I did squeeze some extra lemon over the top of the salmon cause i love lemon. Cooking it again for sure
