Fish Curry
- 700 g Salmon Fillets or other fish
- 400 g coconut milk
- 15 g ginger
- 15 g brown sugar
- 30 g fish sauce
- 15-40 g red curry paste, variation accounts for varying taste buds :)
- 1 lime - juice (no seeds)
- 60 g fresh basil
- 30 g fresh coriander
- 1 Thai Chili - Optional

Get your Rice ready (set in Thermoserve)
Remove skin from fish and cube into medium or large cube : set aside.
Chop basil and coriander for 5 seconds on speed 7 set aside.
Add ginger and chop for 3 seconds on speed 8. Add coconut milk, curry, fish sauce, sugar and lime juice. Blend on speed 5 for 5 seconds. Then Cook for 3 minutes, Temp 100, speed 2. Add fish and cook another 5 minutes REVERSE speed soft at 100degrees. (yes it should cook in 5 minutes as it is already at 100c when you add fish).
Ladle over steamed rice and serve with basil and coriander and optional chili (minced prior in TM)

Easy and delicious. Mixed a handful of baby English spinach at the end. Used butterfly and fish didn’t break up at all. Didn’t have enough fresh basil so mixed fresh and dried. Used some of the coriander stalks and roots with the leaves to make up the total coriander. Used kaffir lime instead of juice. Will do again.

Delicious - thought it was a bit runny to start with but served it over cauliflower rice. Next time will add vegetables of some sort, i added prawns as well as salmon. Defo a hit for me and hubby.

Unfortunately this tasty dish did not look like the photo-my barramundi crumbled completely so we had fish soup rather than a curry. I added mch more vegetables .
Next time I will try to steam or pan fry the fish separately

So nice and easily adapted. I used palm sugar and more fish. Used the butterfly and fish was great (dhufish). I was unsure when to add the basil and coriander so added it during cooking so the red color went but it tastes divine and so quick and easy. Next time I will stir through at the end.
Oh this was what I needed
Oh this was what I needed tonight! Grabbed some fish out to defrost, and as I've gone to take the fillets apart, they literally crumbled in my fingers! Argh! What do I feed 4 adults, 2 starving tweens, a fussy preschooler and a tired and starving toddler??? Quick search, this was the top result, seemed simple enough, all the ingredients in the cupboard, and 10 minutes later dinner was on the table! I served is with Thai Basil Cauliflower rice, was delish!!

Lovely and quick weeknight meal thanks. I think I will add some vegetable next time. Our fish shredded too, not sure if we used the wrong type of fish, but it didn’t affect the taste.

I added garlic, onion and a carrot to the sauce and used about 550ml coconut cream (didn't have any coconut milk) to 820g snapper fillets. I also added some tamari as I found it was a little sweet. I also threw in some frozen peas when I added the fish and used the butterfly. Very yummy.

This was so yummy and so quick!! I did cook the sauce for 15 minutes as i added potato and carrot. I also added an onion and 2 garlic cloves. Soooo good! My husband went for a second helping even though he admitted he was full! This is definitely going to be a regular! Thanks for sharing.

This dish was delicious. I decided to add spring onions, capsicum and green beans for some crunch. I increased the cooking time to about 15 minutes before the fish went in. I also didn't have any ginger but it worked out great anyway!

The recipe makes no mention of at what point the curry paste is added - ? I added it at the same time as the coconut milk, fish sauce, sugar and lime juice, and I also precooked the fish, which not only made it easy to skin but I could also be assured it was cooked properly - does it really cook with only five minutes at 100°C?
All that said, the dish worked out really well and is now on my list of evening meals!
