Recipe's preparation

    Fish
  1. Line Varoma base and tray with a large sheet of baking paper which you have dampened with water and scrunched up. Place salmon fillets in Varoma tray. Set aside.

  2. Place 2 spring onions and coriander in TM bowl, chop for 3 sec/speed 6. Set aside.

(If you would like to cook vegetables with garlic and ginger, place additional garlic and ginger in TM bowl, chop for 3 sec/speed 6. Set aside.)

  3. Place fish sauce, sesame oil, garlic, ginger, lemon grass, lime leaves, remainder of spring onions in TM bowl, chop 5 sec/speed 5.

  4. Spoon this mixture over salmon fillets. Lay lime slices on top of fish. (Don't rinse TM bowl)

  5. Cut pak choy in half and place on the Varoma base.

  6. Drizzle oyster sauce over pak choy. Sprinkle with the additional chopped garlic and ginger prepared earlier.

  7. Add water to bowl. Insert basket with rice. Place Varoma into position. Cook for 15 min/Varoma/speed 4.

  8. Check rice, when cooked place in thermoServer to keep warm.

  9. Remove vegetables. Continue steaming fish until cooked (approx 10 min).

  10. Remove salmon from Varoma. Place onto serving dish. Spoon over cooking juices. Garnish with coriander, spring onions, chili, and lime wedges. Serve with steamed pak choy and rice.

Step 5. Cut pak choy in half. Line Varoma tray with baking paper

Do you mean to line varoma dish (not tray as this has salmon on it) then cut pak choy in half and place on baking paper and then drizzle oyster sauce over?

This was my first time cooking in the Varoma - Flavours were absolutely delicious!!! 17 year old fuss-pot even ate it and didn't complain!!! Will definately make this again but hopefully will have the Kaffir Lime and Chilli next time!!! AND it was the first time in my life I have cooked perfectly steamed, fluffy rice!!! Love

This was my first meal using Thermomix, and i must admit it was a hit. I used Gem Fish fillets instead of the salmon, the herb topping makes this a very tasty dish. I also added broccoli and asparagus as vegies. Whole family enjoyed. Thanks.

  • Very nice and easy dish,

Submitted by Valentine Carter on 22. November 2011 - 23:00.

Very nice and easy dish, salmon cooked pefectly at the end of the 15 minutes with the Pak Choy. I only had 2 fillets of salmon so think I should have halved some of the ingredients as was a little too tart. Not sure if it was the lime peel or the Kaffir Lime leaves. Will defintately try it again but tweak the ingredients a little bit to my taste bubs. Thankyou! tmrc_emoticons.)
