All in one honey mustard chicken

  • 500 grams mixed vegetables, Broccoli, carrot, zucchini, beans

Chicken

  • 4 fillets chicken breast, Butterflied

Honey mustard sauce

  • 2 tablespoons honey
  • 2 tablespoons seeded mustard
  • 2 tablespoons Dijon mustard
  • 200 grams cream
  • 150 grams Milk
  • 3 heaped tablespoons cornflour
  • 1 heaped teaspoon tumeric
  • 1 tablespoon Vegetable stock paste

Sweet potato mash

  • 500 grams sweet potato
  • 125 grams Milk
  • 25 grams Butter
  • Salt and pepper, To taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mashed sweet potato, chicken and steamed veggies
  1. 1. Add sweet potato and milk to Thermomix bowl.

    2. Using a wet piece of baking paper, place chicken fillet pieces on the varoma tray, evenly spaced and ensuring the steam can enter the tray from below.

    3. In the varoma dish place the mixed vegetables, cut evenly to your preference, ensuring you leave space for the steam to enter the tray.

    4. Start the cooking for 20 minutes, varoma temperature, speed 1.5, reverse.

    5. When done, check chicken and veggies are cooked through, transfer to thermoserver to keep warm.

    6. Add butter to sweet potato in bowl, mix for 20 seconds on speed 5 or until mashed to your liking. Transfer to thermoserver to keep warm. Do not rinse the bowl.

  3. 1. Add all ingredients to the bowl.

    2. Set to 10 minutes, 100 degrees, speed 3.

    3. Check sauce has thickened, you may need to add more cornflour and cook an additional 2 minutes using same settings.

    4. Serve drizzled over chicken, vegetables and mashed sweet potato.

Tip

You can use any cut of chicken, just be sure to cut it into pieces that will steam through. Tenderloins are a good size As a guide.

Any seasonal vegetables work well as long as they are uniform in size and will cook at roughly the same time. Don't through spinach in with carrots for example. 

The sauce freezes well if you don't use it all.

    I had a similar experience. Chicken or veg wasn't cooked at all, so I put it on for longer and longer again - what do I get burnt potato at the bottom of my thermie!! Not impressed Puzzled

    I will make the sauce again but potatoes will go in simmering basket with water at bottom to create enough steam to cook everything properly.

    Loved this - I steamed the sweet potato in the simmering basket with water in the bowl, and only steamed the veggies up the top for 6-8 mins.

    i also made it dairy free by just using coconut cream (in the mash, and in the sauce). Will make again

    then converted the whole thing to Gluten and Dairy free, worked a treat thank you.

    Did anyone else find that the sweet potato got really dry? I found there wasn't enough liquid to create the steam to cook the chicken. Not sure if I'm doing something wrong!! Also, I used red sweet potato (white flesh) instead of the usual orange one. Could that be the problem??

    I tried the sauce by itself before I poured it over the chicken and veggies - wasnt too keen on it.  However, once I had it with the Chicken, I was in love!  Dinner was amazing.  My partner basically inhaled it and then asked for more!  I will be cooking this again for sure.

    Thankyou for this beautiful recipe- it is delicious. My sweet potato was caramelised and was PERFECT sauce is delicious. We are dairy & Gluten free so used coconut cream instead of cream and rice milk in the sweet potato. Have added to my favourites and predict it will be enjoyed by our whole family regularly.

    PS- i dont bother putting baking paper underneath when cooking chicken.
