  • 1000 grams free-range chicken thigh fillets, chopped into bite sized pieces
  • 1 tablespoon oil
  • 120 grams dried apricots, Cut in half
  • 400ml can apricot nectar
  • 110ml Liquid Chicken Stock
  • 1 package french onion soup mix
  • salt and pepper to taste
  • 1 tablespoon chopped parsley
  • Corn Flour

Recipe's preparation

  1. Heat oil for 3 mins 100o speed 1.

    Insert butterfly. Add chicken pieces and cook 5 mins 100o Counter-clockwise operation Gentle stir setting mix all the liquids together with the soup mix and add to TM bowl along with the apricots and cook for 25 mins on 100o Counter-clockwise operation speed 1. Add parsley and seasoning to taste. If not thick enough, use a little corn flour mixed with water.

    Nice served with mashed potatoes and steamed vegetables.

    Nice, following other suggestions I added garlic and onions before step one. Omitted the whole apricots and stock liquid. Dont use soup mix as we are avoiding artificial additives etc so used a tablespoon of thermie stock paste and a tablespoon of tamari and it turned out really well.

    a great recipe! i forgot to put the butterfly whisk in and still worked perfectly
    after reading comments i left out the chicken stock too
    cooked some brocoli, carrots and zuchini in veroma tray on top for the last 20-15 mins of cooking time (because it was on a lower temp than veroma it needed that lil bit longer)
    added a tablespoon of corn flour mixed with water at the end and cooked for another minute to combine
    ate with rice
    and it was perfect!

    This was a huge hit! hubby couldnt stop saying how yummy it tasted, Thankyou so much for sharing! I read the previous comments and omitted the stock and added some drained canned apricots along with the nectar. Also left out the dried apricots. Served with pasta just as mum used to do it when we were kids! Will definately be making this again!

    After reading through all the other comments I decided not to add the stock paste and I added some onion and garlic as suggested. Dish was delicious. My partner and his father really enjoyed it also. Though he suggested next time maybe adding a tin of apricots in juice instead of the apricot nectar and dried apricots.

    I had diced some bacon in my Thermomix before I got this recipe ready and decided not to clean out the bowl after I removed the diced bacon. I think this also added a nice flavour to the recipe

    Yummo! I read the comments first and also omitted the stock liquid and I found it didn't need it. Next time I'll add onion and garlic prior to the first step to give it some additional flavour and will add some of the vege stock paste. Used the diced leg fillet and with the butterfly it was perfect. Really delicious and is now on the retro fave list. Thanks for posting the recipe!

    This was a really yum easy dinner. I added mushrooms to the chicken with ten mins to go, turned the temp to varoma and placed vegies in varoma to steam. When finished was a bit runny so mixed some cornflour and water and cooked for a further three mins. Thank you  tmrc_emoticons.)

    Really declicious.  I ommitted the stock and cornflour.  Really didn't need it - otherwise too much liquid. I was cooking caulifower rice in the varoma so I turned it up to Varoma and cooked for an extra 5 min.

    Really enjoyed this recipe so did the man of the house. I did have a problem with the butterfly coming off so I removed it after the first 5 minutes. I also add the cornflour. Full of flavour, served with rice and asparagus. Will definately cook this again! Yum

    Really nice and easy and quick! My 2 year old even had seconds. I for add 1 onion and 1 clove of garlic and chopped it then did step 1 etc. Needed thickening but was great. In final stage of 25 Minutes I added my steamed veggies to the steaming part and rice was just in my rice cooker. All worked well.

    Yum! A nice easy meal. I chopped up a onion and cooked it in the step to heat the oil, just for extra flavour. I didn't add the liquid chicken stock as others had said there was plenty of liquid. I just added a tablespoon of chicken stock paste. Had with rice and crusty bread! Nice meal with little clean up - winning!

    A favourite when I was younger this recipe was lovely. My kids didn't like it but they are very fussy & not keen on apricots. Worked well with butterfly whisk, I had no issues with it at all. We had it with rice but I will cook some veggies with it next time  tmrc_emoticons.)

    sorry but a bit bland for my liking. I added carrots also. I used the butterfly as suggested but it kept coming off as there was too much chicken in the thermie. So I took it out and cooked it on reverse speed soft and this kept the chicken in the small pieces I had cut without shredding it. A nice meal for the kids though, thanks!

I added the remaining apricots near the end. I didn't use the butterfly and my guests enjoyed it the way it came out. I also made my version of Brown Rice salad and veggies to go with it. Thanks
