"Arroz con Pollo" - Latin American style Rice with Chicken

Ingredients

6 portion(s)

  • 1 onion, peeled and halved
  • 2 medium carrots, roughly cut
  • 1 stalk Celery, roughly cut
  • 2 cloves garlic, peeled
  • 30 grams oil
  • 250-300 grams chicken, cut into 2 cm pieces
  • 1 tablespoon chilli powder *
  • 450 grams water
  • 80 grams white wine
  • 400 grams Diced Tinned Tomatoes
  • 1 tablespoon veggie stock paste
  • 200 grams white rice, rinsed well and drained
  • 100 grams fresh or frozen peas

* To make Chilli Powder combine

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon Ground Coriander
  • 1/2 teaspoon ground oregano
  • pinch cayenne powder, or to taste

Recipe's preparation

    Arroz con Pollo
  1. Chop onions, carrots, celery and garlic for 3 seconds on speed 5.

     

    Scrape down sides of bowl, add oil and sauté for 3 minutes, 100 degrees, speed 1.

     

    Add chilli powder and sauté for 1 minute, 100 degrees, speed 1.

     

    Add water, wine, tinned tomatoes and veggie stock and cook for 10 minutes, 100 degrees, reverse, speed 1.

     

    Add chicken and rice and cook for an additional 14 minutes, 100 degrees, reverse, speed 1.  Add the frozen peas (through lid) 2-3 minutes before the cooking process is complete.

     

    Transfer to a Thermoserver and let sit for 5 minutes before serving.

    This was a nice side to a Mexican feast. I love chilli but made it without so the kids wound still eat it and added chilli from the garden on the side.

    Delicious flavours, but the rice came out uncooked, while chicken was perfect. I had to remove chicken by hand and then cook the rice again.

    YUM! This dish is delicious! We served 2 adults and 2 children and had about half leftover, so I threw in some more rice and cooked it another 10 minutes (it was a bit runnier than we like) and had perfect leftovers! Thanks so much. tmrc_emoticons.)

    Hi Lizzy- once cooked the recipe makes almost 2 litres so not suitable to double (so quick you can do 2 batches). And yes the rice is added uncooked. Enjoy!

    Excellent dish! Have only had my Thermo 24 hours and this was our first dinner. I served it with sour cream and mini tortillas. Even my fussy boy loved it - and ate the meat! We could do with more chilli but the recipe is perfect for people who don't want it too spicy.
