Authentic Pad Thai

Authentic Pad Thai

  • 50 g peanuts
  • 900 g water, boiling
  • 500 g Chicken or Pork Mince
  • 2 eggs
  • 1 tablespoon Water. extra
  • 1 package medium thickness Rice Noodles, (approx 350g)
  • 1 package bean sprouts, (roughly 250g)
  • 1 brown onion, large (approx 200g)
  • 2 clove garlic
  • 1 green chilli, (optional)
  • 1.5 tablespoon peanut oil
  • 55 g brown or coconut sugar, (Sauce Ingredient)
  • 20 g soy sauce or tamari, (Sauce Ingredient)
  • 60 g fish sauce, (Sauce Ingredient)
  • 1 tablespoon tomato sauce, (Sauce Ingredient)
  • 80 g Chilli Sauce (Hot or Sweet), (Sauce Ingredient)
  • fresh coriander, To taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Chop peanuts Sp 5 / 5s. Set aside.
  2. Add the boiling water to Thermomix bowl. Place a piece of baking paper onto Varoma tray after you have scrunched, wettened and flattened it out.
  3. Place mince into Varoma dish, making sure to leave a hole in the middle for steam to rise through. Pour eggs, lightly whisked with water, extra, onto baking paper in Varoma tray.
  4. Cook Varoma / Sp 4 / 5 min. Check omlette is cooked then remove from tray. Continue cooking mince for another 10 min.
  5. Roll omlette up tightly then slice into thin strips. Once mince is cooked, break apart a little.
  6. Meanwhile, prepare noodles as per packet directions then drain and place into large ThermoServer along with rinsed bean sprouts and omlette strips. Cover with lid to keep warm.
  7. Empty water from Thermomix bowl then add onion, garlic and chilli (if using). Chop Sp 5 / 5s then scrape down.
  8. Add peanut oil then saute on 90C / Sp 3 / 2min.
  9. Add sauce ingredients to Thermomix bowl and mix Sp 3 / 5s.
  10. Add mince to Thermomix bowl and cook 90C / Sp 3 / 3min. Hit turbo a few times at the end until mince is broken up to your liking.
  11. Add everything to ThermoServer, add a generous sprinkle of coriander and mix well. Serve topped with chopped peanuts and lime wedges.

Tip

If your coriander has the roots attached, cut them off, trim and clean before adding to the Thermomix bowl with the onion and garlic - extra flavour!

Stir-fried chicken strips, cooked separately on the stove, can be used in place of mince in this recipe.

I use Squid brand of Fish Sauce and other common brands in Australia and all suit this recipe. If cooking in another country, check your brand of Fish Sauce to ensure it is not labelled 'double strength', as this will result in the sauce tasting too fishy; if labelled 'double strength', reduce amount by half.

    After reading messages I reduced fish sauce to 40 gm and also cooked the egg and pork on the stove. Next time will also reduce pork to 250gms or perhaps use chicken pieces

    Delishious, quick and easy.
    Made meat free version.
    Decreased fish sauce to 40 grams and doubled peanuts as I like the crunch.
    Felt like it need something more, I added a squeeze of fresh lime juice when plating up and felt it brought the dish together.
    Will definitely make a again.

    Was a pleasant dish but a bit sweet. Kids liked it though. I reduced the fish sauce to avoid the fishy taste people have mentioned. The chicken mince also ended up looking like grains of rice so I'd use chicken breast and shred if I make it again as it all looked a bit mushy at the end.

    what a great recipe. I cooked the egg on the stove which cut out a few steps and always delivers good results.  I also used shredded chicken leftovers. I used heaps of coriander and served with lime.

    Easy peasy. 7 year old said "It's better than the restaurant" I love that child.

    It was ok, lacking flavour a bit though. 

    Added some lemon juice at the end and thinking maybe lime juice next time. It was nice but lacking flavour and the tang that you get in a resturant. Also didnt all fit in the thermoserver so quickly added all at the end to a big mixing bowl to stir together. Also used chicken mince and cooked egg and chicken 10mins first, and mince an extra 5mins. Will make again and double to sauce, double the egg and add lime juice.

    Was not a fan of this dish unfortunately. I had to adjust the directions as my omlette and mince were no where near cooked in the set time. I ended up cooking them separately. I felt there was too much fish sauce and it resulted in a fishy aftertaste.

    Loved the flavour in this recipe. The egg needed 15mins to cook and the pork mince needed about 18mins. Will cook both the egg and mince separately next time in a frying pan with a little peanut oil. My daughter absolutely loved this! Will definitely cook again with these alterations

    Can you please change recipe to say 900ml boiling water though. Sometimes I remember, other times I just get incredibly frustrated that the eggs take so much longer to cook.

    I must admit I was a little disappointed in this recipe. Although I think it could be great with a few alterations. The egg needs a lot longer than suggested to cook. I would prefer shredded chicken rather than mince as the mince seemed to become one with the sauce making for a fairly thick dry dish. The flavours were nice although I added a squeeze of lime onto mine as i felt it needed it.

    Second time I've made this and it's delicious and easy! Went with sweet chilli sauce and slightly less brown sugar. Minced my own chicken thighs first too. Also I find the eggs need cooking for more like 10 min. Thanks for this recipe, sure to be a regular.

    I just made this ...YUM! I pre heated the water and added eggs n chicken when it had reached tempreature (i still needed to cook 3 eggs for 10mins).  I doubled the crushed nuts, made 1.5 times the sauce mixes, added the juice of 1 lime and used a chicken breast (shredded) 250g bag of sprouts; 200g bag rice noodle and added a shredded carrot to last cooking phase... Thanks for sharing will definatly use again!

    Vague & confusing.

    I did not enjoy following this recipe at all. I found it vague (a 'packet' of noodles or bean sprouts can range from 250g to 1kg, resulting in a lot of wastage), disjointed ('meanwhile') and the way off the mark with cooking times (after 5 mins the egg wasn't cooked at all - the temp barely made it to 70 by 5 mins, and the chicken was completely overcooked). Also, it doesn't mention that you need a thermoserver until half way through the recipe.

    Overall it did not taste like any Pad Thai I've ever had. There is no tofu or vegetables, and all we could taste was onion & fish. Also, the chicken had the consistency of tuna, which added to the overall dissapponting outcome of this dish.

    Not sure why everyone else found it so amazing? Would not recommend at all...

    This is very good  for a no stir fry pad Thai.   I was impressed.  Will make it again.  Only subsituations had was almonds for peanuts because of peanut allergies. And I made it vegetarian by pan frying some tofu.  Lovely.  Will make it again.

    This was great - I chopped the nuts, used  shredded chicken, and a 3 egg omlette - after reading all the suggestions. Also did omlette and chicken in a fry pan. Sauce is amazing. I will definately be doing this again - THANKS
