Beef and Red Wine Stew

  • 10 sprigs Parsely
  • 10 sprigs basil,fresh
  • 2 onion, brown, peeled, halved
  • 2 garlic cloves, peeled
  • 4 pieces bacon rashers, sliced in half
  • 30 g oil
  • 100 g mushroom, fresh, sliced
  • 100 g carrots, sliced
  • 700 g Beef Chuck Steak, cubed
  • 50 g plain flour
  • 400 g diced tomatoes, tinned
  • 140 g tomato paste
  • 100 g red wine
  • 1 tbsp meat stock concentrate, or 1 tbsp vegetable stock concentrate
  • 1/4 teaspoon chilli flakes, (optional)

Recipe's preparation

  1. 1. Add parsley, basil, onion, and garlic and chop 5 sec/ speed 6

    2. Add bacon and chop 4 sec/ speed 5

    3. Add oil and saute 4 min/ varoma temp/ speed 1

    4. Add remaining ingredients and stir through with spatula to combine. Cook 60min/ 90C/ Counter-clockwise operationspeed 1

    5. Adjust seasoning to taste. Sprinkle with fresh chopped parsley

    6. Serve with Mashed Potatoes/ polenta/ steamed rice/ pasta

Tip

 You can just flavour with just salt and pepper if you prefer not to use stock. I use good quality stock and you can also use 1-2 tbsp stock concentrate made in the tm. Adjust the amount of stock used depending on your personal preference,

Alternate the vegetables for different ones of your choice

You can use other stewing meat like casserole beef

    Very tasty. I didn’t have mushrooms so I doubled the carrots. I also cooked for an extra half hour and did this with the basket on. Meat was tender and delicious. I’m going to use the leftovers to make pies. 😋

    Soooo flavorsome! I whizzed mine up at night, stored it in my slow cooker pot in the fridge overnight. Took it out the next morning, put it on low all day in the slow cooker. This made the meat so soft. And it felt like the easiest slow cooker meal ever in the morning haha. It will be a regular in our house for sure

    Very tasty stew . I had to cook it around 1 3/4 hrs to tenderise the meat . Added some parsnip and celery and more carrots. Thickened up beautifully with the basket on top . Also added a teaspoon of sugar and lots of black pepper . Yum 😋

    Incredible flavour!!! I used 1 large onion only, and 5 garlic cloves. Wine used was ‘Elephant in the Room’ Pinot noir, which went hugely towards the depth of flavour. Thank you for the recipe 💖

    Its in the thermie now...smells good and the red wine gives it extra oomph to warm the belly on freezing winter days! Looking forward to trying it. I hand cut the bacon and carrots as I wanted it nice and chunky. Fingers crossed.

    Really yummy winter warmer.  I used chuck steak and cooked for 60 minutes and thought the meat was tender.  I didn't have quite enough steak so added more veggies - some celery, parsnip, and potatoes.  For the last 15 minutes, I cooked with the simmering basket on top and the sauce thickened up no problem without the flour.  I'm going to use the leftovers to make meat pies.  Can't wait!

    Delicious stew, and very easy to make. I added one whole chilli instead of flakes, as well as two potatoes cubed.

    I used chuck steak, and after reading the comments about the meat being chewy, I opted to cook it for an extra 30 mins with MC on. During the first hour I used the steamer basket instead of MC. The meat ended up being very tender and the hint of chilli really makes it delicious too. The stew had thickened up nicely, I think the potato may have helped with that. Love

    This is definitely going to be a winter favourite.

    This was the first recipe I cooked from the recipe community website, and only the second main dish I have cooked in my brand new thermie! It was delicious! The addition of a little bit of chilli (I used flakes) really lifted the dish to another level. This will definitely be a regular. I did cook the onion for an extra few minutes having read a lot of comments that the Thermomix cooking times for onion are a bit short (and I wanted them to be sweet rather than having any sharp uncooked onion taste).

    Yum my 3yo loved the sauce. I used less beef and more veggies and left the tm measuring cup off but put the basket on top instead to stop it bubbling out. I put the mc on about 45 mins in. It dried up the sauce a lot and was quite thick. Agree that a nice see you tomorrow of meat would prob make it softer. Thanks for sharing!

    second time making this really lovely i use a good quality steak omit the mushrooms and just add more carrots and veg instead after cooked i then pour into an oven proof dish  as i like to make  some dumplings and  i prefer these cooked in the oven for a crispy top 

    but this meal is a winner in our house thanks for sharing

    Very nice stew. I used rump steak and cooked it an extra 15 minutes. I loved the basil as I thought it gave it and extra depth of flavour. Lots of sauce to go with the mash. I served it with broccolini and a bean and zucchini salad.

    i would recommend using a better cut than casserole steak as ours was quite grisly where normally via slow cooker that has gone. But apart from that great recipe overall!

    This was delicious.  A lovely balance of flavours. I used a very cheap casserole cut from Coles and sadly the meat was disgusting - I'll use a bette cut next time given the cooking time or will use the cheaper meat but do the cooking in the slow cooker.

    This was beautiful! A perfect cold winters night dinner that was super quick to prepare. We used porterhhouse steak and it was cooked to perfection. Flavours were amazing & it has got better over the past few days being reheated as lunch.

    Lovely flavours and simple to make. However, my meat was slightly chewy and not a melt in your mouth type if done in the slow cooker. I used the correct cut... anyone else have the same issue?? 

    Would this be ok to freeze also??

    My fourth day since getting the TM and made this. Easy to make, great flag ours, perfect for winter. I think I over did it with the veggies and could not get all the meat in.  Will keep this is mind when I make this again!  tmrc_emoticons.)
