Best Ever Beef Goulash with Buttermilk Dumplings

Ingredients

Dumplings

  • 230 grams SR flour
  • 60 grams Butter, chilled
  • 110 grams buttermilk
  • pinch salt

Beef Stew

  • 6 sprigs fresh continental parsley, leaves only
  • 2 brown onions, halved
  • 4 cloves garlic
  • 30 grams olive oil
  • 400 grams Beef Chuck Steak, 3 cm pieces
  • 350 grams water
  • 2 tablespoons TM stock concentrate
  • 2 --- carrots, sliced into rounds
  • 150 grams green capsicum, sliced or diced
  • 1/2 can crushed tomatoes, (400g can)
  • 110 grams tomato paste
  • 1 heaped teaspoons sweet paprika, ground, (adjust to taste)
  • 10-12 carraway seeds
  • salt or Vegeta, to taste
  • pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. DUMPLINGS

     

    Lightly grease Varoma dish and tray and set aside.

     

    Place all dumpling ingredients into mixing bowl and mix 20 sec / speed 5, or until dough forms into a ball.

     

    Roll dough into 16 walnut-sized balls (or 32 smaller balls) and place into Varoma dish and tray. Set aside.

     

     

  2. GOULASH

     

    Without cleaning mixing bowl, place parsley into mixing bowl and chop 3 sec / speed 7. Transfer to a bowl and set aside.

     

    Place onion, garlic and olive oil iinto mixing bowl and chop 3 sec / speed 7. Scrape down sides of mixing bowl with spatula, then saute 3 min / 120 degrees C / speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.

     

    Add beef and saute 2 min / 120 degrees C / Counter-clockwise operation / speed 1.

     

    Add all remaining ingredients except parsley, and cook 45 min / 80 degrees C / Counter-clockwise operation / speed Gentle stir setting.

     

    Place Varoma with dumplings into position and steam 35 min / Varoma / Counter-clockwise operation / speed Gentle stir setting. Remove Varoma and set aside.

     

    Transfer goulash into serving bowls and garnish with reserved parsley. Serve topped with dumplings immediately.

    Punks:That's a shame. The dumplings are the Thermomix recipe exactly and we enjoy them as a vehicle for the sauce so haven't noticed them being tasteless as we don't eat them on their own. Not sure why the beef would have been chewy if you used the right cut. This recipe is by my husband who is from Slovakia. Perhaps you can adapt your mum's goulash recipe for TMX? I'd love to try it!

    I really wanted this to be awesome, but I really didnt like it. I felt the dumplings were tasteless & the meat was chewy. Not enjoyable at all. My mum is German, and her goulash is awesome - maybe I just had high expectations.

    Added bayleaves instead of caraway seeds as I didn't have any, also added some mushrooms and a bit of yoghurt in the end. Delicious. Thanks.

    made this tonite  it was very flavoursome but felt like dumplings  absorbed to much of goulash which made it a little dry to eat  Goulash itself was great
